Stuffed Pork Chops with Beer-Glazed Onions

Ingredients:
4 bone-in rib pork chops (1 1/2-inches thick)
4 slices hickory smoked or peppered bacon
4 ounces Fontina or white Cheddar cheese, grated (1 cup)
salt and pepper
Beer-glazed Onions, for stuffing (recipe follows)

Prep:
Cook bacon in skillet or on griddle over medium high heat until crispy. Drain bacon on paper towels, crumble and add to onion mixture. Stir in cheese, set aside.

Prepare pork chops for stuffing by inserting sharp paring or boning knife through side of each chop until tip touches bone. Carefully cut opening to width of about 1 inch. Swing knife tip through chop to create pocket, being careful not to widen opening. Turn knife and swing blade in opposite direction to make finished pocket as large as possible.

Divide onion mixture among 4 chops (about 1/4 cup stuffing for each). Carefully stuff the mixture into the center of each chop. Season both sides of chops with salt and pepper. Preheat grill to 400 to 450 degrees F. Spray chops lightly with cooking spray, place on hot grill. Cover; cook for 8 minutes per side or until internal temperature reaches 160 degrees F using an instant-read thermometer. Remove from grill, cover with foil and let rest for 5 minutes.

Beer-glazed Onions
Ingredients:
1 medium onion, peeled and chopped (about 1 cup)
1 tablespoon oil
1 tablespoon brown sugar
1/3 cup beer

Prep:
In medium skillet, cook and stir onion in oil until onion is translucent, about 7 minutes. Stir in brown sugar, cook for 2 minutes to caramelize. Stir in beer, simmer for 5 minutes or until there is no liquid. Remove from heat, cool slightly.

2 tablespoons Dijon mustard
vegetable cooking spray
2 boneless butterfly pork loin chops
salt
fresh ground black pepper

Mix maple syrup, brown sugar and mustard together and set aside. Remove fat from pork.
Heat a small nonstick skillet on medium-high heat. Spray with vegetable oil spray.
Brown pork 2 minutes, turn and salt and pepper the cooked side.
Brown second side 2 minutes.
Lower heat to medium, cover with a lid and cook 2 minutes or until pork is cooked through. Note: Watch carefully, don't overcook or you will dry the chops out.
Meat thermometer should read 160 degrees. Remove to cutting board and cut into 2-inch slices.
Add sauce to skillet and heat 1 minute, scraping up any brown bits in the skillet.
Serve pork with sauce spooned on top.

Besides the obvious - grilled and BBQed, my husband prefers me to make them as follows;
Heat oven to 350F. Spray bottom of glass or clay 9x13 with PAM and then layer the pork chops on the bottom.
I buy store made stuffing (found in the fresh meat case)and press on top of the pork chops to form a solid sheet of stuffing. (stove top works and is my favorite but my hubby like the homemade version). Bake for 40 minutes. Serve with mash potatoes and gravy!! Enjoy.

My family likes pork chops this way, first pan fry them set aside after they are brown, then slice potatoes like for scalloped potatoes ,sort of thin sliced, brown them slightly,season with garlic salt and pepper.Return pork chops to pan with potatoes. Add a can of mushroom soup and 1/2 can water to the both and let them simmer Until all are tender aprox 20 minutes.

I like them breaded in crushed Ritz crackers and doused with cream and topped with butter and baked. Yum!
