I put about 1/4 cup of water per pound of meat then use a spatula and continuously flatten it while it is browning. Drain.

When i put it in a pan I take a steak knife and cut it into it a bunch. Then once it is cooking I use a wooden spatula to break it apart more.

Try using a potato masher to break it up several times while it is cooking. Works like a charm!

Make the meat patties in advance and freeze them overnight and fry them frozen. Problem solved and they taste great!
