I think the main difference, that some may disagree with, is that love - actual love - is about choosing to be loving. To care for someone is emotional; to love is to make a committed decision day in and day out, no matter what feelings and emotions tell us.

They aren't necessarily mutually exclusive of each other; but they can be....example:
Imagine a person working in a hospital or nursing home that
provides "care" for someone, yet has no regard for that person. Only giving the person "care" (as little as possible); because, that's their job. This person provides care; but not love.
Imagine another person working in the same place, that provides "care" for the person; but, also provides companionship (as much as time allows) by listening and doing little extra things for the person. This person both cares for and loves that person (or shows them love)
Love (charity) is GIVING of yourself for the benefit of another
...Joh 15:13 Greater love hath no man than this, that a man lay down his life for his friends.
EDIT:
If you are just talking about emotions..there really isn't any difference..one is just stronger;but, they are both branches of the same tree.

Do you mean caring, like, you take care of someone? Like, if you got paid to do a job of "caring," that kind of thing?
Caring, I suppose, wouldn't necessarily involve love or even like. You'd just have to do a respectable job serving somebody's needs.
Loving is a deep feeling, an emotional attachment. You would take care of somebody's needs (or want to, anyway), but there's no obligation, no strings to true love.
Also, "caring" is kind of a kiss-off line, too. Like, "I care for you, but I just don't LOVE you."
Kinda like, "let's be friends, let's stay in touch, bla-bla-bla."
If caring is what you feel toward somebody you're breaking up with, obviously it's far inferior to love.

Love is more intimate. Care can be general.
For example I love my family but I care for the people of my country or the homeless near my house. Remember that if you hate someone is because you care about this person.
