Cool Cucumber Pasta Salad
16 ounces corkscrew pasta
2 medium cucumbers, peeled & shredded or juilenned
1 medium onion, sliced
1 tablespoon vegetable oil

1 1/2 cups sugar
1 cup water
3/4 cup vinegar
1 tablespoon dried mustard
1 tablespoon parsley flakes
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic salt

Cook pasta al dente. Drain and rinse in cold water. Drain well. Stir in cucumber, onion and vegetable oil.

Combine all remaining ingredients in a separate bowl and pour over pasta mix. Cover and chill for 3-4 hours before serving.

In this recipe either white or cider would be okay, it depends on your personal taste preference. As a general rule vinegars can be substituted for one another assuming they have the same on acidity. White and cider both have the same acidic content (around 5% I think), but you wouldn't want to substitute a rice wine vinegar for white vinegar because its acidity is considerably lower.

Hello, I would recommend using balsamic vinegar. It's from the moderna region of italy and comes in vintages and some of it is considered very special indeed. It has a sweet, fruity and nutty flavour. Actually I use the cheaper stuff on loads of things and find it lovely. It is rather dark though - like soy sauce - so it might alarm some people.

You can use pretty much any vinegar you wish. I would try a nice cider vinegar with this. White or distilled vinegars can be a bit harsh, though some people enjoy that.

Always use Balsamic Vinegar...I only use white vinegar for cleaning. When any recipe calls for vinegar, always use flavored vinegars.
