Tithing is 10% of your annual increase given to your church to use as it needs, and is required by the Lord.
Offering is everything else you give to your church, and is not required in certain amounts. It is asked that you give as you can and feel appropriate. IE: Money/food to the poor programs, service to others, etc.

Both tithes and offerings are offerings of money to a church or mission.
The tithe is the "tenth of one's income that is given to GOD. see Genesis 14:20..Malachi 3:8-10....in the Old Testament. God blesses the rest of the 90%, and directs the 10% "the tithe" for the Kingdom and HIS will on earth.
An offering is a free will offering of money either above and beyond the tithe, or even under it. Example: a person doesn't normally attend church and therefore doesn't usually give 10% of their income to a church, but slips a twenty dollar bill in the offering at Easter. That would be an "offering".
See Matthew chapter 6:1-4, about Jesus' command on giving.
On a personal note, I cannot exactly explain it, but since we started tithing, we have been blessed over and above what we tithe. You reap what you sow, sometimes 1-fold, 10-fold, or a hundred-fold in return. We were in debt and lived paycheck to paycheck and I could not even imagine giving 10%. But when you realize that GOD is the GOD of finances also, and you release your 10% (or more) every time you receive money back to HIM, He blesses your bank account.

A Tith is a monetary mandatory "donation" which was set up by the church years ago in order to get funding. It was based on income and status and was set at (I believe) 10%.
Now that governments and private sectors provide funding to churches, there is an offering which is from the heart and is not required by the Church. An offering can be monetary or anything else and there is no minimum or limitation to how much one can give.

This is a difficult issue to discern Biblically because the Bible does not mention “special offerings” for Christian causes or para-church Christian ministries. The Bible simply tells us to give to the Lord (1 Corinthians 16:2; 2 Corinthians 9:7). Yes, most definitely we should be giving to the church we attend, serve at, and worship in! If a Christian believes the Lord is leading him to give 10%, does that entire 10% have to go to the church, or can it be split between the church and other Christian purposes? Sadly, the answer to this question usually breaks down based on to whom it is being asked. Churches / pastors will usually teach that the full 10% should go to the church, and any other Christian giving above and beyond the 10%. Christian ministries / causes usually teach that the 10% figure for giving can be divided between churches and ministries – according to the Lord’s leading.

Tithing is ten percent of your income, right off the top, say you make $1,000.00 a week, you tithe $100.00. Offerings is extra, say for missionaries, the buses, the building project, etc. Hope this helps.

One is giving away a tenth of your salary, the other is giving any percentage you want to to the church. However, if you want to help people, why don't you give it straight to charity instead.
