Stuffed Cabbage Rolls
Cabbage leaves are stuffed with mushrooms, rice and onion, then simmered in tomato sauce. This can be made on the stove or in a slow cooker.

Cook Time: 40 Minutes
Ready In: 1 Hour
Yields: 8 servings
INGREDIENTS
2/3 cup water
1/3 cup uncooked white rice
8 cabbage leaves
1/2 pound of mushrooms
1/4 cup chopped onion
1 egg, slightly beaten
1 teaspoon salt
1/4 teaspoon ground black pepper
1 (10.75 ounce) can condensed tomato soup
DIRECTIONS
1. In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for 2 to 4 minutes or until softened; drain.
3. In a medium mixing bowl, combine the mushrooms, 1 cup cooked rice, onion, egg, salt and pepper, along with 2 tablespoons of tomato soup. Mix thoroughly.
4. Divide the Mushroom mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.
In a large skillet over medium heat, place the cabbage rolls and pour the remaining tomato soup over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes, stirring and basting with the liquid often.

Easy Swedish Pancakes--Love them
4 eggs
2 cups milk
1/2 cup all-purpose flour
1 tablespoon sugar
1 pinch salt
2 tablespoons melted butter
DIRECTIONS
In a large bowl, beat eggs with a wire whisk. Mix in milk, flour, sugar, salt, and melted butter.
Preheat a non-stick electric skillet to medium heat. Pour a thin layer of batter on skillet, and spread to edges. Cook until top surface appears dry. Cut into 2 or 4 sections, and flip with a spatula. Cook for another 2 minutes, or until golden brown. Roll each pancake up, and serve.

Roasted Broccoli
Roasting brings out the sugars in vegetables, cooks them to crisp-tender, and lends them a flavor generally not experienced by most people. The trick to roasting vegetables is to do so at very high temperatures for a very short amount of time.
To roast broccoli, preheat your oven to 500 degrees. Arrange trimmed broccoli on a baking sheet and sprinkle with salt and pepper. Roast for 10 minutes, or until fragrant.
Serve hot.

here's one of my favorites perfect on a cold day.
CHICKPEA (GARBANZO BEANS) AND TOMATO SOUP
Ingredients: 2 tsp olive oil, 2 leeks sliced, 2 zucchini diced, 2 cloves minced garlic, 2 x 14 oz cans tomatoes with liquid, 1 tablespoon tomato paste, 3 cans chicken broth, 14 oz can garbanzo beans drained and rinsed, 2 cups fresh chopped spinach.
Method: Heat the oil in a large pan and cook the leeks and zucchini for 3 minutes, stirring constantly. Add the garlic, tomatoes, tomato paste, stock and beans. Bring to the boil, reduce heat and simmer for 5 minutes. Add the spinach and cook for about 2 minutes.

Are eggs ok? how about chili rellenos? roast the peppers on an open fire or in the oven under the broiler. put them in a plastic bag to allow the moisture to help separate the skin and the chili. after about 15 minutes or so, peel the skin off and make a small incision. stuff the peppers with your favorite cheese and roll in flour. beat egg whites till they form white peaks and salt to taste. (if eggs aren't an option roll them in corn meal) dip the peppers in the eggs to coat them and cook in heated oil.
