I think its a wonder-full idea and yes big 12 x 12 albums do take normally a good amount of time. You can get 6x 6 albums or 8 x 8 and they normally have between 10-20 pages but you don't have to do them all. You could make her a brag book for her honeymoon or something more personal from you to her . Some scrapbooks you can even buy kits. Remember memories last a lifetime. Bracelets and linens do not.Although they are nice she wont remember 10 years from now what color napkins you bought her for her china, but she will remember your book.Good luck here are a couple web sites that may help.

A great gift involves the wedding invitation and a piece of cardstock that's the same color as the bridesmaids dresses.
Ask for an extra invitation when she starts sending them out, or use the invitation that you got. Find a piece of carstock (thick paper) that matches the color of the bridesmaid dresses or another prominant color in the wedding. Mount the invitation on the cardstock and frame it in a nice frame. Makes a great lasting memory!

The scrapbook is a great idea.
I would also get her a locket with a pic of you on one side and a pic of her on the other.Sisters forever and a beautiful reminder and keepsake of her wedding day.

I love the idea of a scrapbook, but that may be harder. The idea of the flower preservation is absolutley perfect. It's something that your sister, will want, and she may not be able to budget it in when everything is said and done. So do some research. But the flower preservation has my vote!

My maid of honor got my wedding bouquet set in a beautiful shadowbox. I'm not sure what they put on it to make my roses stay the same, but three years later, and it is still beautiful.

when my sister got married, i bought her and i a daytrip to the spa...haha yes even though it was kinda a gift to me too - it was nice to spend alone time with her right before she got married. plus we got to get pampered, and believe me, having been a bride myself - you need that non-stressful time to just relax and forget about all those little details for a day !!!
