Save yourself alot of time and help him feel better about cooking by starting him with a crock pot. There is nothing to burn and you can even buy the frozen crock pot starters until he feels comfortable with it.My husband uses ours all of the time and here are some of the recipes he does in it:
Pot Roast:
Cut 2 pounds of potatoes and carrots and layer in bottom of crock. Brown a 2 pound chuck roast in a skillet on the stove top and place on top. Add 3/4 cup of water to skillet and deglaze, pour liquid into crock. Cook on low for 6 to 8 hours. Serve with Biscuits or rolls.
Shredded Beef for tacos:
Pour 1/2 can tomatoes and green chiles in bottom of crock pot, place 2 pound chuck roast on top, pour remainder of can on roast. Cook on low 6 to 8 hours. Shred roast in juice and serve in taco shells with all the fixings or as shredded beef nachos.
Pork Loin:
Version # 1 Marinade a 2 pound pork loin overnight in the fridge in a zipper bag with 1/2 a store bought garlic marinade,
reserve other half for the next day. Place a bag of frozen vegetables ( we prefer stir fry mixes) in bottom of crock pot. Add reserved marinade and the place pork loin on top. Again cook for 6 to 8 hours on low. Serve with rice.
Version # 2
Put 1 pound of saurkraut in bottom of crock pot, place a 2 pound pork loin on top and cook 6 to 8 hours on low. Serve with a side salad.
Chicken
Place 4 bone in chicken breast in crock pot and pour 1/2 bottle of your choice of barbeque sauce over top. cook 6 to 8 hours on low. Serve with skillet potatoes and a veggie.
Chicken # 2
Thaw and rinse a 2 to 3 pound whole chicken. Season outside with poultry seasoning and fill inside with large chunks of onion and celery coated with poultry seasoning. Cook on low 6 to 8 hours. Strain drippings for gravy or freeze as a base for homemade chicken noodle soup. Serve with salad and rice.

Pick up a George Foreman-like grill for $15 bucks at Wal-Mart, buy some nicer thicker bread from the bakery at the supermarket, get some things like cheese and meat and roasted red peppers from a jar (need to be sliced), pickles, whatever, and make sandwiches, then butter the outer sides of the bread and grill them until the cheese melts.
Instant panini sandwiches, and he can experiment with all flavors of sandwiches. For some reason, although some guys are mystified by cooking, they invariably love constructing sandwiches. Grilling them adds the cooking/heating element that on a nice piece of bread really comes off well.

Beef and Wild Rice Casserole 1 1/2 lb. ground beef 1 medium onion, chopped 1 cup uncooked wild rice, rinsed 1 can (10 3/4 oz.) condensed cream of mushroom soup, undiluted 1 can (10 3/4 oz.) condensed chicken noodle soup, undiluted 2 soup cans water In a skillet, brown ground beef with onion until the beef ins browned and the onion is tender; drain. Place in a 3-qt. casserole. Add all remaining ingredients and mix well. Cover and baker at 375 degrees for 1 hour and 20 minutes, stirring often. Yield: 6-8 servings

Chicken and Rice
4 boneless skinless chicken breasts
1 can cream of chicken soup
1 can cheddar cheese soup
1 cup milk
1 packet Lipton onion soup mix
3 cups Minute Rice
2 cups chicken broth or water
Pour the rice in a 13x9 casserole dish. Pour the chicken broth or water over it. Lay the chicken breasts on top of the rice, sprinkle the onion soup mix over the chicken. Mix the two soups together in a bowl with the milk and pour over chicken. Cover with foil and bake at 375 degrees for an hour - uncover and bake another 15 minutes. Serve with a salad and some crusty hot bread. Enjoy!

Hamburgers on the grill or George Foreman grill.
1LB ground hamburger
2T diced onions
1 clove garlic
splash of soy sauce and a splash of Worcestershire sauce
pinch of oregano
1/4 tsp. garlic salt
salt and pepper to taste.
mix together, put into patties, grill on the BBQ.

first of all dont listen to the first guy healthy choice , oh please, I got a recipe 2 of them, that he might love to do, Here is a simple spring dinner thats neat and easy, get 4 large big baking tomatoes, cut the top off each one, take out the inside the pulp of the tomatoes, put them in a cassorole baking dish, make velveeta macornie and shells cheese dinner, on top of stove, follow directions, fill the tomatoes with the shells and cheese sprinkle bread crumbs on top and bake for 350 for 45 minutes, serve with corn, and sald you got a meal, Use thye same concept with greenpeppers, but use beef or roni from chef boy ardee, and lay velveeta cheese on top and bread crumbs and then bake, i have more recipes, but this is limited, so good luck

how about some grilled or shake and bake chicken with some salad...
point him towards the Kraft website, they have tons of stuff there, that take less than 30 minutes and are not hamburger or kraft dinner...
try some of their potato wedges in the oven, drenched in Italian dressing and sprinkled with parmesan...AWESOME!
serve with a peice of grilled meat and some salad and there you have it!

Healthy Choice frozen dinners are very good, easy to cook in the microwave, nutritious, and often go on sale at half price at the grocery store I shop in.
