* 1 tablespoon coffee flavored liqueur
*
* FILLING:
* 1 (8 ounce) container mascarpone cheese
* 1/2 cup confectioners' sugar
* 2 tablespoons coffee flavored liqueur

Pour one third of reserved coffee mixture over cake, then spread with half of the filling mixture. Top with coffee-flavored cake layer; poke holes in cake. Pour another third of the coffee mixture over the second layer and spread with the remaining filling. Top with remaining cake layer; poke holes in cake. Pour remaining coffee mixture on top. These are to die for, no chocolate, no booze... just caramel yummy-ness!

Blonde Brownie Recipe

1 1/2 cups firmly packed light brown sugar
1 cup unsalted butter
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
1 teaspoon vanilla extract
About 1 1/2 cups butterscotch, semisweet chocolate, peanut butter, or white chocolate chips, optional

Preheat the oven to 375 degrees F. Butter and flour a 9 by 13-inch glass baking dish.

Put the sugar in a large bowl. Melt the butter in a small skillet or in the microwave in a glass measuring cup. Stir the butter into the sugar until smooth, and then cool to room temperature.

Meanwhile, in another medium bowl, whisk the flour, baking soda, and salt together.

Beat the eggs and vanilla into the sugar mixture. Add the flour mixture a bit at a time and mix until a smooth thick batter forms. Fold in the chips, as desired. Spoon the batter into the prepared dish and spread to evenly fill the dish. Bake until the blondies are light brown around the edges and a toothpick inserted in the center comes out clean, about 20 to 25 minutes.

Remove from the oven and let cool slightly. Invert onto a rack and cool completely. Cut into squares and serve.

This is a great blonde brownie recipe. Give it a try!

Pumpkin pie or pecan pie are probably the two most common desserts served on Thanksgiving Day, I would look up a recipe for pumpkin pie. If pumpkin is hard to find where you live, you can substitute cooked, mashed sweet potato/ yams, and you can even substitute cooked, mashed carrots, although sweet potatoes are closer to pumpkin in flavor. The recipe will probably call for pumpkin pie spice- here's how to make that: Mix up a jar of your own: * Mix 1/4 cup of cinnamon with 4 tsp of ground ginger, 2 tsp of nutmeg, 2 tsp allspice, 1 tsp freshly ground cloves. You can make an adequate pumpkin pie spice with just the cinnamon, ginger, and nutmeg. I like the added flavor of allspice and cloves, but in a pinch you can do without.
