Blooming Onion

1 large sweet vidalia onions
1 egg
1 cup buttermilk
1 cup flour
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons cayenne pepper
1/4 teaspoon oregano
1/8 teaspoon thyme
1/8 teaspoon cumin
1/8 teaspoon Old Bay Seasoning
oil (for frying)
Dip
1/2 cup mayonnaise
2 teaspoons ketchup
2 tablespoons creamed horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
1/8 teaspoon dried parsley
pepper


Beat together the egg and buttermilk in a medium bowl.
Combine the flour, salt, pepper, cayenne, oregano, thyme, cumin and old bay in a separate bowl.
Slice 3/4" to 1" off the top and bottom of the onion and remove skin.
Cut out a 1" core and slice about 3/4 of the way down to create petals.
Place the onion in boiling water to separate the petals.
Let cool.
Dip the onion into the milk mixture.
Dip the coated onion into the flour mixture, covering liberally.
Repeat process.
Let onion set in the refrigerator for 15 minutes before frying.
Heat vegetable oil in a deep fryer or pot to 350 degrees.
Fry the onion right side up for 10 minutes until brown.
Drain on a rack or paper towel.
So delicious!!!

Bloomin' Onion w. Creamy Chili Sauce
Ingredients

For the Batter:
1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons garlic, minced
2 teaspoons paprika
1 teaspoon pepper
24 ounces beer

For the Seasoned Flour:
2 cup flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper

4 Vidalia or Texas Sweet Onions

Method
Mix cornstarch, flour, and seasonings until well blended. Add beer, mix well. Cut about 3/4" off top of onion and peel. Cut into onion 12 to 16 vertical wedges, but do not cut through bottom root end. Remove about 1" of petals from center of onion. Dip onion in seasoned flour and remove excess by shaking. Separate petals and dip in batter to coat thoroughly. Gently place in fryer basket and deep-fry at 375° to 400° 1 1/2 minutes. Turn over, and fry an additional 1 1/2 minutes. Drain on paper towels.

Place onion upright in shallow bowl and remove center core with small biscuit cutter or apple corer.

Serve hot with Creamy Chili Sauce.

Creamy Chili Sauce

Ingredients
1 pint mayonnaise
1 pint sour cream
1/2 cup chili sauce
1/2 teaspoon cayenne pepper

Method
Combine all ingredients in a medium bowl and mix to thorougly combine.

Sorry but I've never eaten at Outback yet.

Take an onion and slice it in a criss-cross fashion but not all the way. In other words, slice the onion from the top and down but never reaching the bottom. Make all these slices until you have vertical and horizontal cuts. Pull apart gently and it should look like a white carnation.

After this you can sprinkle bread crumbs over it after glazing it in something. Fry it and it will look like chicken fries arranged by a professional caterer.

Note: You can cut from top to bottom completely, but don't let it fall apart.

take one big onion, like a vidalia, place on counter with bottom down, and cut in a grid fashion to almost the bottom of the onion, then dip in the batter of your choice and deep fry till the onion splays out like a flower...there you have it...serve with your choice of dressing but I like to make a bloomin' onion sauce with a bit horse radish and real mayo...or you can serve with ranch or blue cheese dressing...

They make a special gadget for that (Blooming Onions?) and sell at Wal Mart, Target, etc.
