Pani Puri's Puri is made of wheat flour, course or fine. First take some flour (maida or suji). Add some ghee or any vegetable oil. Knead well with water to make dough. No break small pieces into balls and flatten them with a rolling pin on a plate. Fry these small puris in heated oil to fry to golden colour and take out to cool. Now these puris are ready to be taken with boiled, peeled and mashed potatoes, boiled gram, namkeen (salty snacks) and salt, red chilli powder, dry mango powder and black pepper powder by adding skimmed curd and tamarind sauce.

Pani-Pur's Puri
Ingredients:
1/2 cup semolina (rawa)
1/2 cup plain flour (maida)
2 to 3 tbsps soda water
Salt to taste
Oil for deep frying
Puris
Method:
Combine the semolina, plain flour, soda water and salt to make a semi-stiff dough and knead well. Allow it to rest under a wet muslin cloth for 10 to 15 minutes.
Divide the dough into 40 equal portions and roll each portion into 37 mm. (1 1/2") circles. Place these circles under a damp cloth for about 5 minutes.
Deep fry in a kadhai in hot oil on a medium flame till they puff up and are golden brown (Press each puri using a slotted spoon till they puff up in the oil).
Remove, drain on absorbent paper and store in an air-tight container. Use as required for making pani puri.
Serves: 4
Preparation time: 30 minutes

How to make pani puri:
* To make pani:
* Measure all ingredients.
* Adjust spices and tangyness to taste.
* Strain through a wire strainer to remove any rough bits.
* To make puri:
* Mix sooji, maida, baking soda, salt and enough water to knead a soft dough.
* Stand covered with wet cloth for 15-20 minutes.
* Make small sized balls.
* With the help of some dry maida or sooji, roll into thin rounds.
* Heat oil in a pan and deep fry puris till very light brown and crisp.
* Drain in a paper towel for a while to dry out the oil.
* Store in an airtight container when cool.

Buy a box of mini puri's... its should come with the water (pani) flavour in a packet- which you mix with water. Then boil chick peas, potatoes and add some spices.
