Definitely agree with delta, Absolute Peppar is one of my favorite alcohols, unfortunately it is hard to get anyone to drink with me.
Also some more rare fruits, kiwi (perhaps with lime), boysenberry... Mango is always good (especially with chicken and salsas) and blueberry is too, (pairs especially well with heavier meats, game meats in particular).

I know that it sounds extreamly odd, but try infusing your vodkas with herbs and spices. Whole peppercorns, basil, lemongrass, and spicy peppers make for very interesting martinis.
My favorite thusfar was a Basil and jalepeno infused vodka served straight up in a martini glass with a pepper/basil leaf garnish.
This is also very good for cooking (red vodka cream sauces with a rigatoni pasta).

Try infusing gin with cucumber. I use two cucumbers cut into slices with one bottle of gin. Let it infuse for two days or so, then try it with tonic. Very refreshing!
