We're having biscuits and gravy for dinner tonight, but we're out of Pillsbury biscuits so I need to make some by hand.

What is your best tried and true biscuit recipe? No links please unless it's something you've tried and turned out well.

this is how my grandma taught me to make them...
1 tbsp. baking powder
2 c. flour
3/4 c. milk
1/4 tsp. salt
1/3 c. shortening
450 degrees , Use a dry fork to stir together flour, baking powder and salt in a medium-sized mixing bowl. Cut in shortening, using a pastry blender, two knives or your fingertips, until the mixture looks like coarse crumbs. Make a well in the center of the mixture and add all of the milk. Stir with a fork until mixture is moist. Place dough on a lightly floured surface. Kneadthe dough, turning the dough, until soft and smooth. Roll dough, Cut biscuit shapes out of the dough using a biscuit cutter Place biscuit on an ungreased cookie sheet and bake 10 minutes or until golden on the bottom.

Ole Fashioned Biscuits
Prep. time 10 min. Oven temp. 400. Bake time 15 min.

For 12 biscuits

2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbsp sugar
1/2 c. butter or margarine
3/4 c. buttermilk

Mix flour, baking powder, baking soda, salt, and sugar in mixing bowl.
Cut in butter or margarine until mixture resembles coarse crumb.
With fork, stir in buttermilk to make a soft dough. Turn out onto lightly floured board and knead about 10 times to form a smooth ball. Do not over kneed or biscuits will not be tender.
Roll out to a 6-by-6inch square. Place on ungreased baking sheet. With knife, cut dough into 12 portions. Do not separate; leave biscuits in a square.
Bake at 400 until golden brown, about 15 min.

Good served with: Butter and honey

Mile High Biscuits

The trick to light and tender biscuits is to MOVE!MOVE!MOVE! Don’t dilly dally. After you’ve formed the dough into balls, quickly coat them in flour and get them in the pans. Make sure your oven is preheated too.

Ingredients
2 cups flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/2 stick unsalted butter
1 1/2 cups cold buttermilk
melted butter

Method
Preheat oven to 500°

Mix all the dry ingredients together with a fork. Cut in the butter. Fold the buttermilk into the flour mixture just until blended. Divide the dough into 11 balls; coating each with flour. Place floured dough balls in greased cake tin, 8 around and 3 in the middle. Drizzle some melted butter over the top

Bake for 5 minutes at 500°. Turn the oven temperature down to 450°; bake for 15 minutes. Remove from oven; let rest for 5 minutes before serving.

I make them for church, so the recipe is large. One soup day we made 3600. Makes 36 biscuits.

5 cups sifted flour
5 t baking powder
2 t salt
Mix dry ingredients
1 c Crisco, cut in wiith a pastry blender untl the mixture is like cornmeal
add 2 c milk and mix by hand til a dough forms, knead several times before rolling out . Cut biscuits. Prick with a fork, bake for about 20 minutes at 450.

I just use Bisquik and follow the recipe on the box.

1,000 times better than Pillsbury.
