It is made by adding rennet, an enzyme (originally was derived from the stomachs of baby animals such as calves, but nowadays is made from plant sources), to milk. The milk is heated and curds and whey form. The desired amount of whey is pressed out leaving the curds. It is also salted. After that it can be pressed, flavored, introduced to bacteria (for blue cheese), colored, aged, formed and have a rind put on all up to the desire of the cheese producer.

Cheese is made from milk that has ben soured. Certain bacteria are added that change the lactose to lactic acid which curdles the milk. The curds are squeezed to express the liquid whey. The curd is than aged, sometimes with other flavorings such as dill, smoke, bleu cheese mold, etc.

well i only know the old way. they put it in a churn and churn it. then the stuff turns to buttermilk. then they churn a little more and the buttermilk turns to cheese. ?? not sure
