Yes, they still cut the cross shape, or at least they should. The same thing goes for (the top of) Irish soda bread, and other foods.

The cross shape (let's just call it an "X") allows for expansion and escape of water vapor, while the food is cooking. With sprouts, it keeps them from splitting (almost like popping popcorn). If you used a slit instead of an X, the sprouts could just split in half. Still edible, but less appealing.

With the soda bread (and other baked goods), the X in the top allows the bread to rise evenly. If the X weren't there, the bread would probably come out lop-sided. And since the crust dries out faster than the rest of the bread (while cooking), the X "forces" the inevitable crack to be in the center of the bread.

I think most people only ever it sprouts at Christmas. Why would an atheist be cooking the party food if he doesn't even believe in the birthday boy?

Yeah, this is a bit of a ridiculous question!! Do you think atheists are always happy, coz they can't be 'cross'. And must they always stay on one side of the street coz they can't 'cross' the road.
