ok..you'll need the following -

Sliced Bread (i have found, the best bread to use is Tesco's long life, the one in the foil looking bag, freeze the bread, as it makes it easier to spread the prawns)

500 grams freshly peeled prawns

10 grams of pork fat, (the white fat between the skin and meat) DO NOT FORGET to add this, as it makes the prawn mix rise when frying.

salt and pepper

2 egg whites

sesame seeds for coating.

vegetable oil for frying.

blend the prawns , egg whites and fat together, add salt and pepper according to taste. Empty the blended ingredients into a large tub. You need to pick up the blended mix and literally 'throw' it back into the the tub. Repeat this about a dozen or more times, this step is important as it gives the mixture texture.
Spread the mix onto the bread then coat the surface of the prawns with the sesame seeds.
Deep fry, prawn side down, when golden, turn over and crisp the uncoated side.
Thats ALL..
