Easy & Delicious Shortbread
Shortbread is one of my favorite things.
Ingredients
1 1/2 cups flour
3/4 cup unsalted butter
1/3 cup sugar
Method
Heat oven to 350
Blend all ingredients well. Dough will be stiff.
Press into a 9" x 9" buttered dish. Prick top with fork
Bake until pale golden brown on the edges. Cool and cut into 24 squares.
NOTE: This recipe does NOT double well; better to make two or three batches if you want quantity.

This is a very easy and great shortbread.
Whipped Shortbread
1 pound of butter, leave on the counter for 1/2 hour to warm up abit.
1c. cornstarch
1c. icing sugar
3c. flour
1/2tsp. vanilla
Beat all ingredients together with an electric mixer.
Drop by teaspoonfuls on a cookie sheet that has been lined with parchment paper. You can also roll the dough in your hands to make a ball then flatten on cookie sheet with something that has a design on it(bottom of a glass). Make sure you flour the object before flattening. Decorate with half a walnut or cherry. Bake at 325F for 20-25 minutes.

Shortbread cookies
Preheat oven to 375 degrees
1/2 pound butter, softened (2 sticks unsalted is good)
5 Tablespoons sugar
2 cups sifted flour
1 teaspoon vanilla
Beat butter and sugar. Add flour and vanilla. Roll into small balls. Flatten with fork or small cookie stamps that are dipped in sugar.
Bake on greased baking sheets for 8 to 10 minutes.
Delicious and easy!
My son's favorite holiday cookie! (I used colored sugars for holiday occasions.)

Traditional shortbread
Cook Time: 10-12 min. Serves: 6 dozen
Ingredients
1 1/3 cups Corn Starch
2 cups all-purpose flour
4 2/3 cups powdered sugar,sifted and divided
2 1/3 cups butter, divided
1/2 teaspoon vanilla
2 1/2 teaspoons grated lemon peel, divided
1/3 cup lemon juice
Directions
Preheat oven to 350°F. In a medium bowl combine the corn starch, flour and 2/3 cup powdered sugar. Set aside.
In a large bowl, beat 2 cups of butter with a mixer at medium speed until softened and smooth. Add the corn starch mixture, vanilla and 1 1/2 teaspoons of lemon peel; beat well.(if necessary, refrigerate dough 1 hour or until easy to handle.)
Shape the dough into 1-inch balls and place them 1 1/2 inches apart on ungreased cookie sheets. Bake 10-12 minutes, or until edges are lightly browned. Cool completely on wire racks.
For icing, beat together in a medium bowl the remaining 1/3 cup of butter and the remaining teaspoon of lemon peel until the butter is softened. Add the remaining 4 cups of powdered sugar and lemon juice; beat until well combined. Add red food coloring, if desired. Decorate cookies with icing. Store in a tightly covered container
