Take a strip stake and grind it up from a limousin cow. Angus meat is not nearly as good as limousin. You can find this in the grocery store sometimes but i get mine from the meat processing plant so its all real and has no chemicals or preservatives in it(much healthier).Some other meats you could try are turkey, deer, and pretty much anything else you could think of. You can find them with your local hunters or meat processing plants in the fall.

My husband makes beef jerky all the time and the best meat we have found so far is the London Broil roast. It has very little fat to trim off(You don't want much fat if any) When you slice it thin(about 1/8") most pieces are uniform in size. It slices easier when you partially freeze it. You can buy it at most grocery stores and we always wait until the have them buy one get one free at Safeway.
We use MI MOUNTAIN Jerky Cure and Seasoning which you can find in most grocery stores(we buy ours at Safeway). They have a lot of flavors to pick from just find the one you like the best. Mesquite is my favorite.
You will probably have to find a specialty meat store,butcher shop or a hunter to find the wild game. More stores are starting to carry buffalo but it's kind of pricey. Ours carries the buffalo burger but nothing else so far.
My husband(a hunter) also makes goose,antelope & deer jerky but I'm not a big wild game fan. It's OK but I just prefer BEEF.

The leaner the better. I find sirloin works well. Venison is great. I even made turkey jerky once. It turned out great. If you have to cut it by hand do it partly frozen. It is much easier to do a thin cut. Around 1/32 to 1/4 inch. I wouldn't`t go any thicker than 1/4. Have fun.

Just go to the store and pick any roast meat that has no fat, or extremely little fat on it.
Then you will have to cut it thin. You can get buffalo from specialty meat stores and moose from hunters you know.

Deer jerky is the best I have ever had. Can be hard to get at times. I like turkey as well.

Go to any grocery store meat dept. and ask there. They will even cut it for you at the right thickness.

Kangaroo.
A friend of mine makes jerky and says it is the best one to make.
Kangaroo meat also has the lowest fat content of any red meat.

Try flank steak or skirt steak. If you don't see it at the store, ask the butcher there.
