Especially, but not only maple sugar pie.

Being a former chef and having used Maple sugar, it is available at place that sell maple syrup, or a retailer that handles a large variety of Maple products, Maple sugar is made like regular sugar, the syrup is evaporated and then sprayed on cooling tumbler and then ground to granules.

To make it your self you would need to reboil the syrup and let it get down to half the volume, spread it on a cookie sheet, and let it cool then buzz it in a food processor, or just use dark brown sugar with added maple syrup. I like to use pure malpe syrup for sugar pie, but also add some corn syrup, it makes the filling more stable and not run at room temparture.
