The experiment is for children with special needs so to would have to be very simple.

To show that growing seeds need to take in air.
Have 2 test tubes, into one put cotton wool with mustard seeds on, and water.
Into the other put cotton wool with mustard seed on top, add water over the seeds, then seal the water with boiled oil, so no air can get in.
Keep both tubes warm.
The seeds in the test tube with warmth, water, and air, will grow.
The seeds with warmth, water, but no air will not grow.

The simpliest way to do an experiement like that would be to take to plants or flowers that are similar, like roses. Put one inside an airtight case and put the other right next to it in the open. Within a few days the plants will have a noticable difference. You would then be able to explain to them why plantlife needs co2 to live.

Maybe you can grow two plants in a small hydroponic setup, using an air bubbler in one bucket, leaving the other plant just sitting in the solution/water. The plant with no air will die due to root rot, while the one under a bubbler will thrive.

A simple one would be to take a small plant, possibly some watercress or a small flower. place in a small plant pot and then cover it with a see through yoghurt pot, then seal the pot with sealotape or cling film and wait for the results. You would probably have to place it in a dark, cool place overnight, you should then have some visible evidence that it is dying.
you could perhaps then remove the pot and place in sunlight for the day and see if it improves.

try gowing cress in a little dish with one open and another taped in a little grip seal bag, the cress will grow (or not in the case of the bag one) in a few days so it's quite quick too. :-)
