It could be several factors. Sometimes too much butter will cause cookies to become hard. Also be careful to not overbake them.
Try a recipe with veg. oil instead of butter. Don't bake them on the lowest rack in the oven.

There's a couple things you can try. Put cookies into a large zip lock type bag with a slice of fresh white bread. This seems to keep the cookies moister longer. Or, you can put the cookies into a bag when they are still a bit warm and seal the bag up tight. This also traps moisture and keeps them soft much longer.

there are various reasons for a Cookie to get tough.
One of them is the nature of the sugar, an other one is the baking time.
The first thing to try is to reduce the baking time. retrieve them before they change aspect like you may do with a regular cake.
You may try to switch a small part of the regular sugar with corn syrup or fructose.

Substitute brown sugar for the cane sugar. If nothing else, at least cut the cane sugar with brown sugar. Good luck, and enjoy.

make sure you sift your ingredients first before mixing, also bake at the right temperature, and at the right time.....too much baking soda can make your cookies,as hard as a rock.

Keep them in sealed tupperware or a ziploc, and toss in a slice of bread.
