I've started to see this cut in the meat department and would like to determine the grilling time with the cookout calculator at charcoalbob.com. What cuts is it similar to in terms of texture, density and flavor? Does it require any special treatment for grilling?

Developed by the research teams of University of Nebraska and the University of Florida, the flat iron steak is gaining in popularity with restaurants across the United States.
I absolutely love flat iron steak. Not to be confused with skirt steak.
The beef cut is actually a top blade steak derived from the tender top blade roast. The roast is separated into two pieces by cutting horizontally through the center to remove the heavy connective tissue.
Marinate and grill is the best way to cook. This cut is ment to be cooked rare to ever so slightly medium. I think med rare is perfect. When serving cut across the grain. It's also good cold so a great choice for salads.

a FLAT IRON STEAK IS CALLED A UPPER BLADE STEAK. iT IS CUT FROM THE CHUCK PORTION, OF BEEF.
These steaks in a restaurant are marinated for at least 3 days. I recommend marinating them in italian dressing, or any vinegar based marinate. Cook on medium heat,for about 6 minutes on each side. don't overcook. best served medium rare
