don't be discouraged. Sometimes you are losing weight but the scales don't show it yet. Your body is probably adjusting to everything you are doing. Have you noticed your clothes are a bit loose? That could be an indication of the weight loss.
One thing that would help you see a drop on the scales is to do a one day fast of water and lemon juice. This would also help your liver.
You are seeing the benefits of what you're doing - don't stop.
if you have any other questions let me know,

Well, at least your general health is improving. It could be, however, that you are dieting much too strictly. Assuming you want to weigh, say, 11 stone, you would need about 2000 calories a day to sustain that level of physical effort. It's possible that, coupled with some of your preexisting conditions, your low calorie consumption is causing you body to do everything possible to retain weight. Given the level of dedication you espouse here, I don't imagine I need to say anything about ensuring you give a legitimate effort at the gym instead of just going through the motions. What was your calorie consumption like before you started dieting? If the figure I quoted earlier is totally in appropriate for you, a 500 kcal reduction, per day, should net you a pound per week unless there are other factors at work. You should probably consult a health care provider.

I assume you are doing this exercise regimen at least three days per week...
If you are, weight loss will likely follow, but the first thing that happens is that you are building muscle mass in the early stages of an exercise regime. Muscles are more dense than fat and will weigh more. You will probably notice your shape changing first. Weight-loss will usually show up from top to bottom (i.e. your face will become thinner, then your chest area, etc.)
Your heart and respiratory system are definitely benefiting from the cardio.
Interesting good news on the arthritis front - hang in there!!!
