i have everything in my fridge, eggs, bacon, sausage, bisquits, waffles, pancakes.....and of course cereal...but is there someting "different" i can do for our sunday breakfast. the boys are awake watching toons, my girls are still fast asleep and i've been up since the dogs woke me.....

Omelet in a Bag

Get out all of your ingredients that you would like to use for omelets, cut everything up, and call in the family.

Start a large kettle of water to a rolling boil.

Hand each person a quart sized Ziplock freezer bag.

Have each person ut all the ingredients into a Ziploc freezer bag and shake to mix it up. One omelet per bag. Remove as much air from the bag as possible and tightly seal.

Put all the bags in the pot, reduce heat to medium high and cook for 13 minutes. 6-8 omelets can be cooked in the same pot.

Cut the bags open and the omelet rolls right out.

While the omelets are cooking, make the bisquits, waffles, or pancakes (add chocolate chips if you have some) to serve with the omelets.

When people are bored with the same old, same old in my household, my hubby and I will make a new breakfast combination. Preheat the oven to 350. You could lightly toast some waffles (at least two per person, for layering). Cook up sausage and bacon. Get out a baking pan(square) it should fit 4 of the waffles in the pan, whip up three eggs.

Layer a layer of waffles on the bottom, then a layer of bacon and sausage combo, then the remaining waffles. Them pour the beaten egg over the top and bake for 30 minutes. Serve with fruit, yogurt, syrup, chocolate chips, raisins whatever add ins your family likes.

There is another version of this that I call Baked French Toast. This works the best and gets the lightest and fluffiest if you assemble it the night before you want to serve it, cover it and let it sit in your refrigerator overnight.
It is a similar assembly, use a deep baking pan and layer slices of raison bread. Seasoning layers as you like (sugar and cinnamon works well). You will want to make a triple layer of the bread and seasonings. Then you pour beaten eggs over the top and let it sit overnight until the bread absorbs the eggs and it will about double in height. Put in the oven in the morning, preheat at 350 again and in about 40 minutes you will have an incredible breakfast.(This one is generally dangerous as your family will want you to make it a lot)

These are big hits at holiday brunches around here. You can make the baked French toast a bit healthier with whole grain bread, but we all have to have a treat once in awhile.

Try this French toast or 'Bombay' toast - Break a couple of eggs, whip them up with some milk and sugar. In the meantime have your frypan ready with melted butter. Take some bread and soak it in the mixture for a few seconds. Fry the bread both sides until golden brown. Drizzle with honey or maple syrup...u can even have them with sausages or bacon, its up to u. Enjoy!

You can make scrambled eggs,sausage,pancakes save your sausage grease let it settle so you can pour off the grease and use the giblets for gravy to pour over your biscuits.to make the gravy add 2 tablespoons of flour to your pan,stir until flour soaks up the juice then add 1 cup of water and stir add salt and pepper to season and your ready to pour gravy over your biscuits.

Cinnamon Raisin Pecan Rolls

Ingredients

For the dough:
1/4 ounce package dry active yeast
1/2 cup warm water
1/2 cup scalded milk
1/4 cup sugar

1/3 cup unsalted butter
1 teaspoon salt
1 whole egg
4 cups flour



For the filling:
1/2 cup melted unsalted butter, plus more for pan
3/4 cup sugar, plus more for pan
2 tablespoons ground cinnamon
3/4 cup combination dark raisins and chopped pecans [see Baker’s note]



For the glaze:
4 tablespoons unsalted butter
2 cups [1 lb. box] powdered sugar
1 teaspoon pure vanilla extract
up to 6 tablespoons hot water



Method
Heat oven to 350°



In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, 1 to 1 1/2 hours.



When doubled in size, punch down dough. Roll out on a floured surface into a 15 x 9 inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with raisin | pecan mixture [if desired]. Beginning at the 15 inch side, role up dough and pinch edge together to seal. Cut the roll in half, cut each half in half and each piece in half again to get 12 equal size pieces.



Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together, cut side up, in the pan and let rise until dough is doubled, about 45 minutes. Bake for 30 minutes or until nicely browned.



Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

Baker’s note:
I don’t know a lot of people who like raisins in their Cinnamon Rolls, I happen to love them. You can leave them out as you wish. You can leave out the pecans too, or replace them with walnuts. If you add anything the total contents should be a generous 3/4 cup.
