This for a whole chicken but just use the breasts and cook for less time keep an eye on it to see when done enjoy this moist delicious chicken
The poached chicken:
1 medium chicken
2 onions, peeled
2 carrots, peeled and roughly chopped
2 sticks celery, roughly chopped
2 medium leeks, chopped
1 handful parsley stalks
3 bay leaves
1 large sprig thyme
small handful peppercorns
salt
4 pints water
Method
1. To poach the chicken: put the chicken in a large pan and add the vegetables, herbs and spices. Add the water, making sure that the level is at least 5cm/2in above the top of the chicken.
2. Bring to the boil and then reduce to a simmer. Simmer for 40-45 minutes, making sure that you skim the fat from the top of the pan every five minutes or so. (You can test whether or not the chicken is done by piercing the thickest part of the leg with a knife; if the juices run clear the chicken is cooked).

Decide what seasonings you're going to use and put everything in an oven baking bag. Just prick the bag 3 or 4 times to let the steam escape and it will cook fast and juicy with only the drippings from the chicken itself.

Grilling is good too and will add a little more flavor while still highlighting the flavor of the chicken.
Steaming is a great way to help ensure a tender breast.
Are they boneless and skinless? I recently re-discovered the joy of a roasted bone-in, skin-on chicken breast. Olive oil, salt and pepper at 350 for 35 to 40 minutes. Fantastic!

steaming, or roasting, or baking......sprinkle some Mrs. Dash Tomato, Basil, and Garlic . This is some of the BEST seasoning I've seen in a long time. The steam will make the seasoning "plump up". You won't believe how much flavor comes in that particular flavor of Mrs. Dash ! It's my favorite. I wish they made it in big jars like Tex-Joy !

I wrap mines in foil and oven cook them. I agree that the george foreman grill is healthier though if you're bothered about that. Hope it turns out ok however you cook them

If you want the best flavour, plain, BBQ char-grill them.
A hint of lemon juice will add a slight zest to the flavour if you want to.
