My husband is trying to eat low carb. I'm trying to figure out something that will be easy for him to eat when he's on the road (he's a delivery driver that doesn't stop to eat). Any ideas?

make lettuce wraps.
Take some chicken breast, slice it fry it up in salsa. Once finished make lettuce tacos (I use romaine lettuce). Then wrap them up in a zip loc bag.

They have low carb tortillias. Make him low carb cheese crisps. you can eat those cold, and they are pretty good.

Include a thing of string cheese, and some celery and you have a very low carb lunch.

Or, you can use any type of egg dish. eggs are only 2 carbs per egg, so egg salad just have to eat it w/ a spoon

the imitation crab meat is very tasty..you can chop that up and have creamy crab with mayonaise... also need a spoon but tasty.

There are lots of main dishes you can make...
The additions are the hardest part to come up with... string cheese is great... so are pickles..... And a veggie side would be celery, or some carrots (don't go over board on the carrots though).

oooo dear, is weight a problem.....count what you have in term of calories and try to consume less then you need....low carb will leave you lethargic.
