The answer is YES for anywhere in mainland China and "Depends" for Hong Kong. If you are from USA you have 90 days in HK without visa requirement, UK Citizens have 180 days.

If you enter China by way of Shanghai, then go to Hong Kong and return back hom via Shanghai, you will need a DOUBLE ENTRY VISA.

You need a visa to enter Mainland China (even if you are only on transit) and you will need a seperate visa to enter Hong Kong and Macau with the following exception

US visitors may enter HK for upto 90 days without a visa as a tourist.

US, Canadian and 53 other nationals may enter Macau as a tourist.

If you are US green card holder or US citizen, you do not need a visa for less than a week in Hong Kong. But I think you do need visa for Shanghai and Macau. Please check with China Embassy to confirm.

People of most nationalities can get a visa on arrival in both HK and Macau, which will allow you to stay between a week and six months (depending on your country of origin).

This web page shows the nationalities that can make visa-free visits to HK: http://www.immd.gov.hk/ehtml/hkvisas_4.htm

Very few nationalities can get visa-on-arrival for China, and you really should get a single- or double-entry tourist visa in advance. Or you can apply for one in HK or Macau, which will take one to three days to process, depending on how much you are prepared to pay. It's pretty routine.

if you are a US citizen then you will a visa to enter mainland china. you will not need a visa to enter macau or hong kong since your stay is quite short. however, if you do have to go back into mainland china more than once, you will need a multiple entry visa.
