This is a very broad question and impossible to answer in this small space. There are books 500 pages thick just on vitamins and minerals. They all have different functions in the body. Put easliy, if you become deficient in certain vitamins or minerals you can develop conditions or diseases related to that nutrient. Example, if you are severely deficient in vitamin C you can develop scurvy (not a common disease anymore). There are thousands more....
