I have a 16 oz. block of cod in my freezer and I was wondering if anyone has a good recipe for me to try. Now I want to make it clear that I know about good online resources to use---like allrecipes.com, recipezaar.com, and foodnetwork.com. I just have never made cod before and I would like someone who has tried a good recipe for a cod block that they like.

10 points for someone who gives me a recipe I like instead of rattling off links to lists of recipe databases. Thanks!

Fish Tacos

For the fish:
12 ounces cod divided into 1½ ounce portions

For the salsa:
1 garlic clove, minced
6 tomatoes, peeled, seeded, diced
1/2 small white onion, diced
2 tablespoons minced fresh cilantro
2 jalapeños, seeded and minced
1 1/2 teaspoons sea salt

For the white sauce:
1/2 cup mayonnaise
1/2 cup plain full fat yoghurt

For the batter:
1 cup flour
1 cup Budweiser
garlic powder
freshly ground black pepper

For assembly:
12 fresh corn tortillas
1 green cabbage, shredded
1 lime, cut into wedges

Method
Wash fish by dipping in cold, lightly salted water or water with a little bit of lemon juice added. Be sure fish is completely dry before dipping into batter.

Prepare salsa; reserve.

Prepare white sauce; reserve

In a shallow wide plate, add flour, garlic powder and black pepper. Add the beer and make a batter.

Put the vegetable oil into a deep skillet and bring to 375°. Place fish in a single layer [do not crowd]. Cook fish until batter is crispy and golden brown.

Heat corn tortillas lightly in a skillet or Mexican comal until they are soft and hot.

To assemble, on each tortilla layer the fish fillet, white sauce, salsa and cabbage. Top it off with a squeeze of lime. Fold tortilla over to serve.

well...I don't know what a block of cod is...but if it is just a filet of cod then here goes....heat oven to 350. Saute a chopped onion, diced celery, 1 15oz can of chopped tomatoes, about 8 chopped calamata olives and 3 tablespoons of capers in olive oil until hot...pour mixture over the fish and bake for 20-30 minutes depending on how thick the fish is....serve with mashed potatoes and green beans...yummmmm

We like to cook it on the gas grill. We place butter on the bottom of tinfoil and the cod on top with more butter, sliced onions, breadcrumbs and S&P to taste. Fold over the tin foil to keep the heat in and cook until done on medium heat. It is nothing spectactular but it just adds a light flavor to the fish.
