Get yourself an Indian cuisine cook-book. Those are about the best vegetarian dishes I've ever tasted. With such a variety of spices, vegetables and ways of preparing things, it's impossible to get bored ! There are also good indian-based website with authentic recipies from the different states, as well as tricks to adapt indian cooking to western ingredients, where to find spices, ect.

The book I use mainly is:

The Everything Indian Cookbook, by Monica Bhide

Both contain non-veg recipes as well as veg, but they are well separated because vegetarism is very much practiced in india, and veg dishes are sometimes mandatory for some festivals.

There are plenty of great cookbooks. Check out your local bookstore or research them on Amazon. Likewise, you can try allrecipes.com You will have to create a user account, but it is free of charge.
