I had miso soup at a local japanese rest. they served cold bean sprouts that were i think marinated in some kind of sauce on the side, but i cant figure out what it is. it said kobachi/kabachi on the menu but i cant figure it out still!!

It's probably shoyu(soy sauce) mixed with Mirin which is rice wine vinegar. You can find both at your local grocery store in the asian foods section.

Traditional Japanese Bean Sprout Salad:

Ingredients:

500 g Fresh bean sprouts (mung or soy)
1 tablespoon Sesame oil
1 tablespoon Salad oil
1 tablespoon Crushed, toasted sesame seeds
3 tablespoons Light soy sauce
1 clove Garlic, crushed
2 Spring onions, very finely chopped
1 teaspoon Honey or sugar
Dash of chili powder or cayenne pepper


Instructions:

1. Wash bean sprouts.
2. Bring a pan of lightly salted water to the boil.
3. Drop in the bean sprouts and return to the boil.
4. Boil for 1 minute if using mung beans, longer for soy beans.
5. The sprouts should be just tender, never cooked.
6. Drain at once and cool under cold water.
7. Drain well.
8. Combine all other ingredients for the dressing and toss with bean sprouts.
9. Chill before serving.

Usually bean sprout salad is marinated in sesame oil and a tiny bit of soy sauce. Yummy.
