Well it sounds like you are on the right track. Also be aware of products with gelatine - such as lots of yoghurts, jelly, ice cream etc- you can often find brands that don't use gelatine. And beware of cheeses containing rennet- there are also vegetarian cheeses available at supermarkets (they are still dairy but they just don't contain animal rennet)- they taste like everyday cheese.
Then as far as your whole diet goes- try to eat 5 meals a day (vs 3 big meals) and eat as much fresh and whole foods as you can. Drink lots of water and make your own fresh juices- these help absorb the iron from your meals.

You can eat dishes made from lentils, beans, grains like wheat, rice, quinoa, millet, corn, and also from dairy and vegetables and fruits of different kinds.

If you want to be an extremist, fundamentalist vegetarian (ha ha), your best diet is strictly raw vegetables, and fresh fruits. I think it's great to be on this diet. so many diseases will disappear. You will feel healthiest. But of course the self-control and discipline factors should come in. I would love to go on this kind of diet. Maybe I will try it during this Holy week.

My favorite vegetarian food is beans and brown rice. It keeps me full for HOURS.
I also love Luna bars, in the S'mores flavor. They are a great source of protein.
And some high-fiber cereal with vanilla soymilk. It's got a bit of sweetness, and is really healthy and delicious.

Almonds and other nuts provide healthy fats, protein, and iron. I love Organic Food Bars. They are made with Almond butter, flax, seeds. There are different flavors and varieties providing extra omega fats, and protein. Yummy!

Things with lots of protein! And iron. You'll need to watch those, because some vegetarians have a hard time getting them, as they're commonly found in meat

well its depends how extreme you are as a vegetarian there is some people that wont even eat a product with an animal product in it so you decide how extreme you are then get back to me

pizza plan mushrooms or even pepers and onions!
nuts good source of protein!
