I'm going to visit relatives over Easter and they're all Greek, so they want me to make baklava. I make really good baklava, and I usually have to mail order the filo dough because I live in South Dakota. So I was hoping to find some fresher dough somewhere around there when we go.

Chicago has several Greek neighborhoods with little hole-in-the-wall grocery stores. Sometimes you can buy freshly-made filo dough from the ladies in the neighborhood at those stores. Or failing that, they can probably help you find someone who will make it for you.

And I'd also pay a little call to the nearest Greek Orthodox church and see if someone can help you there. Making filo is a pain in the keister, as you obviously know, and I always find someone else to buy it from.

Normally the major grocers carry Athena brand phyllo, or you could try a middle eastern store as well.

you buy them in the supermarkets frozen section, the secret to using them is not to let them dry out when you open the packet, cover them with wet teatowels whilst you are using them.
