The recipe I was going to suggest is very similar to Hugtunity's, but without the coffee, which I find interesting and might try. (Since I'm pregnant, it'll have to be decaf.) I guess it would give the cake a mocha flavor.
As Hugtunity and Lilyian have said, it's great and sweet (I intended the pun) for you to think of your vegan friends. I've been to things where the people doing the dinner/hors d'ouvers knew I would be there (it wasn't a large thing, either, a veggie tray would have been sufficient), and there wasn't anything. I've grown accustomed to carrying granola bars and fruit with me.
Also, a search for "vegan cake recipes" or "vegan baking" should give you a wealth of results.
I'm also sharing a vegan chocolate frosting recipe.
My cake recipe:
Absurdly Easy Chocolate Cake
Ingredients:
3 cups flour (680 grams)
2 cups sugar (450 grams)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc's = 10 ml)
1 teaspoon salt (5 cc's = 5 ml)
3/4 cup vegetable oil (200 cc's)
2 tablespoon vinegar (30 cc's)
2 teaspoon vanilla (10 cc's)
2 cup cold water (480 cc's)
Instructions:
Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.

Chocolate Frosting/Glaze:
Ingredients (use vegan versions):
1 cup of sugar
1/2 of a teaspoon of vanilla extract
1/2 of a cup of cocoa powder
2 tablespoons plus 2 teaspoons to 3 tablespoons of vanilla soy milk
Directions:
Mix all ingredients. Use more soymilk for glaze, less for frosting.
For chocolate-mint: add some peppermint extract, you can add less vanilla if you want. Probably 1/8 of a teaspoon, I have never measured, all I know is it is a very small amount, just a couple drops or so.

I have figured out that if I keep adding stuff to the frosting mix, I get a thicker frosting. As it is, it's just barely enough to cover the cake. Eh. I still like it.

I've altered the cake recipe to 10 tablespoons of cocoa. Also, I think I've lowered the sugar in the frosting, as the vanilla soy milk is sweet and there is already plenty of sugar in the cake. I've also started to use nothing but whole wheat flour and the last time, I added a tablespoon of applesauce instead of oil to cut the fat. The next time, I might just do all applesauce, just to see how it works.

Try a Mayonnaise cake (recipe can be found on recipezaar.com) although regular mayonnaise is made with eggs, I believe you can purchase vegan mayo at a health food store. A mayonnaise cake is a chocolate cake that is very moist and deeelisiousss!!!

Vegan Chocolate Cake:
INGREDIENTS
1 1/2 cups all-purpose flour
1 cup white sugar
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup strong black coffee
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

Here is one of our favorite cake recipes. It is moist and delicious and very easy to make! I'm sure you could easily sub soy milk for the regular fat-free milk. This cake also freezes well (but usually doesn't last long enough to freeze!)
CHOCOLATE APPLESAUCE CAKE
1-1/2 cups applesauce (unsweetened)
1/2 cup fat-free milk (could sub soy milk)
1/3 cup oil (or melted margarine)
1 tsp. vanilla
1-3/4 cup flour (I use part whole-wheat-pastry flour)
1-1/4 cup sugar
1/3 cup unsweetened cocoa powder
2 tsp. baking soda
1/8 tsp salt (optional)
1/2 - 1 cup chopped nuts, raisins, or chocolate chips (optional)
Preheat oven to 350F. In a large bowl whisk together applesauce, milk, oil, and vanilla. In a separate bowl combine flour, sugar, cocoa, salt, and baking soda. Add flour mixture to applesauce mixture. Blend well with a whisk. Add optional ingredients (nuts, raisins, or chocolate chips). Pour mixture into 9 x 13 pan that has been greased or sprayed with oil. Bake at 350F for 45 minutes. Can melt some chocolate chips on warm cake and spread over cake, or cool cake and frost with chocolate frosting, or cool and dust cake with powdered sugar. Can also serve unfrosted cake topped with applesauce. Delicious!
Can also bake as:
- 18 cupcakes. Bake at 375F for 24 minutes.
- 24 very small cupcakes (fill half full). Bake at 375F for 20 minutes.
- 9-cup bundt pan. Bake at 350F for 55-60 minutes. (per original recipe)
If short on applesauce can use 1 cup applesauce and increase milk by 1/2 cup.
For Mexican chocolate cake can add 1/2 - 1 tsp cinnamon and 1/2 tsp. nutmeg to batter.
CHOCOLATE BUTTERCREAM FROSTING
1-1/2 cups powdered sugar
About 1/3 cup unsweetened cocoa powder
2-4 tbsp. margarine, softened
2-3 tbsp. milk (can sub soymilk)
1/2 tsp. vanilla
Combine powdered sugar and cocoa powder in a small mixing bowl. With small portable electric mixer beat in margarine, milk, and vanilla until mixture is smooth and has a good spreading consistency. Makes enough to very minimally frost a 13 x 9 cake (no extra). (To make frosted cake extra special sprinkle it with some coconut.)

4 Tbsp. cocoa
1 c. Miracle Whip
1 c. water
1 tsp. vanilla
Sift together dry ingredients and mix will. Add Miracle Whip, water and vanilla. Beat well. Bake in 9 inch layer pan at 350 for 45 min to an hour.
