Can't believe there's Irish sandwich snobbery towards me and my fellow guttersnipes who enjoy munching on a bit of bacon with brown sauce.Oh and the price?-I thought that I had purchased the whole pig-lol!!

I love brown sauce on my bacon sandwiches. I agree that O Briens prices are really dear. Have you seen the bread they use? Its cheap bread from Asda!!! Honestly. How can they justify charging so much? Ive never been back since.

I am a chef and a restauranteur. If my customer wishes to have brown sauce then he shall have it, even if he is going to pour it over seared duck breast on a bed of pureed beetroot and sauteed leeks served in a cointreau jus.

Every table in my restaurant has a small bowl with discrete sachets of HP sauce, Heinz tomato ketchup and Colmans mustard. This enables people to enjoy their food without having to embarrass themselves by asking my waiting staff.

My restaurant is silver service - it is not a 'caff', and my clientele is largely middle class, but my menu includes dishes where brown sauce is a desirable adjunct. I make my own pies and pasties, that are cooked in a rich jus, and my sausages used in my mixed grill are from a local independent butcher, but a bit of mustard does no harm. I try to cater for all tastes, and if you are the type of person who likes pie and chips with a bit of tomato sauce, then you will be served such a meal, in the same way that if you like to eat lobster thermidor aux crevettes cooked in the Provencal style with truffles and aubergines and with a fried egg on top, you will be served such a meal. I even keep Spam in case a Monty Python fan drops in.

I don't give a tinkers cuss what people eat in my restaurant as long as they behave themselves. You have bought a meal from me, I have prepared the meal and cooked it to the best of my ability, using the finest ingredients. I charge accordingly, but your meal is yours and what you do with it is up to you. My restaurant is run for the customer, not for the chef.

Other chefs and restauranteurs should take note. My restaurant is in a small East Anglian port and seaside town, and competes against four hotels, two gastropubs, three other restaurants, several pubs, fast food joints and caffs. Even in the winter, when no tourists are about, it is adviseable to book a table in advance. I cater for 50 covers, and it is rare that I do not cook 90 servings per service.

Brown sauce is not such a big thing in Ireland, (well not with anyone I know, but no doubt I'll stand corrected), so maybe that's why its not on the menu. But its just basic snobbery, that's all. These places should give the customers what they want, we pay enough for them
