SOme papayas are sweet, but some have a bitter taste, I am wondering what the difference is.

It's the latex content in the papaya.
After harvesting, the papaya skin should be very lightly scored from end to end with a sharp knife 6 or 8 times to allow the latex to exude from the skin and placed in the sun to ripen. They say that this takes the bitterness out of the fruit. Once I didn't score one, just to see, and sure enough, it was bitter. Care must be taken not to score it too deeply or the fruit can mold before it gets completely ripe.

I don't buy fruits or veggies from other countries, because who knows what pesticides are allowed there. In Mexico, kids were getting awful rashes on their hands and arms., some developing skin cancer. It was later linked to the pesticides on avacados they picked for shipment to the US. I try to buy organic, because I don't believe pesticides just rinse off-some of it has to be absorbed into the produce, I would think. I don't want to consume anything that is made specifically to kill something
