A electric grilled veggie burger (or veggie dog) and steamed veggies. It takes me about 15 minutes to make and if I don't sit in front of the computer and play, about 15 minutes to eat. Sometimes, I'll boil a potato in the pot under the veggies. Also, veggie deli meat is quicker, because all you have to do is slap it on the bread and add condiments.
I also like the rice suggestion, though what I thought of was simpler-- Just boil brown rice, when it's done add beans and spices. (I steam veggies on top of the rice) However, I like the addition of the corn and spicy tomatoes. Sometimes, though, I'll add the veggies to the rice and beans, but if I'm really hungry and the veggies are ready, I'll eat the veggies while the rice is cooking. I have found that the fastest way to cook the rice is to put it in with the water and when it starts to boil, turn it down. This way, the rice soaks as it cooks.
Also, I'll boil some rice with veggies steaming on top. While it's cooking I'll press and cut some tofu. When the rice is done, and I drain it, I add the tofu, veggies and soy sauce.
Whole wheat pasta (with veggies steaming on top while the pasta, which I cook the same as the rice) with tomato sauce is also quick and easy.

Put on some rice. While it's cooking, mix a can of black beans and a can of corn. Chop a tomato or two and add it to the mix. Squeeze the juice from half a lime on top and add some chopped cilantro. Add some diced red onions and/or jalepenos if you want, too. Serve the bean/corn mix over rice with a scoop of salsa on top.
OR
Stick some red peppers under the broiler until their skins are totally black. Take them out and stick them in a sealed paper bag for ten minutes. Make some couscous. In the meantime, mince some fresh parsley and mint. Chop some oil-packed sundried tomatoes. Crumble some feta cheese. Take the peppers out of the bag, peel off the black skin and chop. Mix everything together and squeeze some fresh lemon juice on top. This is a super-easy pilaf that can be turned into a main course by adding some grilled or roasted zucchini and eggplant pieces.

Stir fried vegetables
Place a fry pan or wok on the stove and put or cut the following straight into it.
oil
garlic
red capsicum (peppers - not the hot ones)
carrot
zucchini
beans / snow peas
broccoli
mushrooms
Other veges you like Eggplant (aubergine), is possible just add it last as it soaks up the oil. Parsnips go well.
Turn the stove on high and stir
After a few minutes poor in some water.
Then add Thin Soy Sauce
[Usually 2 parts Thin Soy sauce to 1 part Fish Sauce to 1 part Oyster Sauce (You may accept this as a vegetarian especially as if you wish it is possible to get immitation oyster sauce, in any case you only need a small amount of these sauces)]
Stir
Add sugar
Stir
You could add raw cashews or tofu if you wished or go overboard on the mushrooms.
Try serving it with mashed potato.

If you have an IMMERSION BLENDER, then here's a quick, easy, and delicious recipe to try that is a weeknight favorite for us. You won't believe how rich and creamy tasting the soup is!
MEXICAN PINTO BEAN SOUP
1 tsp olive oil
1 large onion, chopped
1 clove garlic, minced
15 oz can diced tomatoes, or 4 ripe tomatoes
1 tsp chili powder
1 tsp cumin powder
1-1/2 tbsp sugar
2 cups vegetable stock
3 cups cooked pinto beans (homemade or two 15-oz cans, rinsed and drained)
Heat olive oil in a stockpot (6 qt stockpot works well). Add onion and garlic, and saute until tender. Add tomatoes, chili powder, cumin, and sugar, and simmer for a few minutes. Add vegetable stock and cooked pinto beans. Simmer for about 10 minutes. Puree the soup in the pot using an immersion blender. Adjust seasonings to taste. Ladle soup into bowls. Serve soup topped with a dollop of non-fat sour cream. Can also sprinkle with chives. Serves 2-4.

Microwave a potato (I like white or red the best) then top it with cottage cheese. If you like you could also add caramelized onions or salsa.
Have some steamed broccoli or green beans to go with it and voila!

If you allow yourself to eat cheese, many pasta dishes are easy to make, such as ravioli and tortellini.
Otherwise there's couscous, garden burgers, bean burritos and tacos, or nachos without meat.

Get some Indian food from your local store. You microwave it. They sell it where they sell the taco stuff. It is fast and easy and good.
