No fish, shrimp, ect........I do not eat any face food, also I refrain from eggs.

Sri Lanken Potato Curry
* add green peas if you like- Yummy and serve with regular rice!

INGREDIENTS
3/4 teaspoon coriander seed
1/4 teaspoon fennel seed
1/4 teaspoon cumin seed
4 leaves fresh curry

4 large potatoes - peeled and cubed
1 tablespoon ghee (clarified butter)
1/2 onion, finely chopped
1 clove garlic, minced
1 (1 inch) piece fresh ginger root, grated
1/2 teaspoon cumin seed
1/2 teaspoon coriander seed
1/2 cup coconut milk
1 tablespoon chopped fresh cilantro
salt to taste
DIRECTIONS
In a small skillet, over a low heat, dry roast the 3/4 teaspoon coriander, 1/4 teaspoon fennel, and 1/4 teaspoon cumin seeds individually until an aroma is starting to be given off. Combine all these with the curry leaves, and over a low heat, dry roast for about 5 minutes more. Do not burn Grind the spices and leaves using a mortar and pestle or a clean coffee grinder. Set aside.
Place potato cubes in a microwave-safe bowl, and microwave until about 1/2 cooked (time depends on individual microwave), about 3 to 5 minutes.
In a large skillet, melt the ghee over medium heat. Cook the onion, garlic, and ginger in the ghee until golden and aromatic. Meanwhile, grind the remaining coriander and cumin seeds; add with one teaspoon fresh curry powder (prepared in the first step) to the onions and garlic. Cook, stirring, for 30 seconds. Stir in the potatoes, and cook for 3 minutes. Stir in the coconut milk, bring to a simmer, and then reduce heat to low. Cover, and cook until potatoes are tender, about 7 minutes. Season with salt to taste. Top with chopped fresh cilantro, and serve.

Celeraic and other root veg that are English are an excellent base for all vegetarian dishes. Use less beans/pulses with root veg but use peppers/tomatoes/onions/green peas etc as usual. Your curry element is so personal that it cannot be proposed but remember coconut milk, peanut butter and or cream/yogurt make a delightful mild flavour

Chilli is the most heat enhancing arghhhhhh.

its time for pizza

Ingredients:

All purpose flour 3 cups
Salt 1 tsp
Yeast 2 1/4 tsp
Warm water 1 cup
Sugar 1 tsp
Pizza sauce or spaghetti sauce 1 1/2 cups
Mozerella cheese 1 1/2 cups
For toppings: Onions, tomatoes, green peppers, mushrooms, black olives (cut into small pieces)

Method:

1. In the warm water, add yeast and sugar, let it sit for 10 minutes.
2. Add this dissolved yeast and salt to flour and knead this into a smooth dough. Cover the dough with a damp cloth and keep it aside for 2 hrs to allow fermentation.
3. Then roll the dough on a pizza pan. Spread the pizza sauce, mozerella cheese and the vegetables.
4. Preheat the oven to 425 degrees F and bake the pizza for 20 to 25 minutes till the crust becomes light brown in color.
5. You can vary the toppings according to your taste.
6. Serve with Parmesan cheese powder.
Serves: 4
Preparation time: 30 minutes
