My stepmother (half-Japanese) made a dish that had the following ingredients...

dried mushrooms,
sliced beef/chicken/shrimp,
bean sprouts,
water chestnuts,
bamboo shoots,
sesame seeds,
& onions.

I'm sure that it had other stuff in it, but that's all I can remember...I was a child. Does anyone have a recipe using these things or maybe fabricate a recipe? It was a stir-fry, and it may, or may not have been served over rice.

Traditional Japanese Stir Fry:

INGREDIENTS:

1/2 pound chicken breast
1/2 pound beef (flank steak works well)
10 large tail-on shrimp, peeled & deveined
1 medium onion, thinly sliced
8 white musrooms / shiitake mushrooms
1 small tin of bamboo shoot
1/2 smll tin of sliced water chestnuts
handful of fresh snow peas
1 small chunk of fresh ginger (1 inch piece)
handful of mung bean sprouts
1 tbsp rice flour
3 tbsp soy sauce
2 tbsp mirin
2 red peppers (small variety)
salt and pepper to season
sesame oil to taste
vegetable oil for frying
sesame seeds for garnish

PREPARATION:

Cut chicken and flank steak into thin strips. Cut the mushrooms in half. Cut ginger and red pepper finely. Season chicken, beef and shrimp with salt and pepper and sprinkle with rice flour. Heat some vegetable oil in a frying pan and add ginger and red peppers. Add the onions and stir fry.

Add chicken and beef in the pan and fry. Add the shrimp (do not overcook). Next add the snowpeas and mushroom slices in the pan and stir-fry them.
Add the bamboo and water chestnuts. Pour soy sauce and mirin over the ingredients and stir quickly. Add the bean sprouts & stir. Sprinkle with sesame seeds and a little sesame oil.

Just mix all the ingredients in a stir fry and serve over steamed rice. Sounds delicious.

It sounds like a traditional stir-fry. The beauty of stir-fry is that you can add just about anything you like as long as long as you have those basic ingredients. You can serve it with either rice or noodles.

Saute chicken breast chunks, garlic and mushrooms about 5 minutes; add bamboo shoots and green onions. Saute for 3 more minutes. Add ginger, soy sauce and bean sprouts; continue cooking uncovered 2 more minutes.
