1. Chinese for the likes of Beijing Duck (北京烤鸭) - I had this in Beijing it was fantastic! Shechuan spicy food, Cantonese Dim Sum and so on.
2. Japanese for Sashimi, Teppanyaki and Tempura and so on.
3. Mongolian - I went to Inner-Mongolia and had a traditional BBQ and it was the best I've ever had. If I was aware of more Mongolian dishes perhaps I would be able to rate Mongolian food as being even better!
4. Thai - Winning combination of spicy and sour ingredients. Green curry, moon shrimp cakes and dom-yum soup.
5. Indian food - there's just so much variation out there, I've rated it 5th as restaurants vary vastly in quality and quite often you can expect a bad stomach - sorry!
6. (I haven't tried food from Malaysia, Indonesia or Singapore).
7. Korean - I've been to various Korean restaurants and although I like Kimichi and think that eating out of the hot-stone bowls is quite novel - I find the food mostly quite bland - which is probably why it's eaten with Kimichi -to spice things up. In defence of Korean food - a lot of my friends like it.

I doubt you'll find many people who have had genuine meals from ALL of these places. By geniune, I mean actually going to the country and eating in a middle class restaurant or cafe - NOT buying a ready-meal from a supermarket in a different country! Chinese food is different in the UK to Chinese food in the US as both have evolved seperately over the years.
So, from what I HAVE experienced:
1. Thai (best)
2. Singaporean
3. Malaysian

I was born and brought up in Hong Kong, lived in Tokyo for 4 years and I have been to many places around the world. As I'm a Chinese, I vote Chinese is the best for the varieties (Cantonese, Shanghainese, HuNan, Szechun...).
1) Chinese - Roast goose, dim sum, steamed fish, shark fin soup, long braised seacucumbers, salt baked chicken, etc...
2) Japanese - sushi, teppanyaki, sukiyaki, kobe beef steak, miso soup, tempura, ramein, grilled fish, seaweed salad, etc.
3) Thai - Green curry chicken, yellow curry king prawns with coconut cream, tom yam kung, taro clay pot rice, pomelo & shrimps salad, etc.
4) Vietnamese - pho, spring rolls, Roasted chicken in red beancurd sauce, grilled Vietnamese jumbo prawn, pork chop in lemongrass flavour
5) Korean - kimchi, bbq beef (galbi) with sangchoo, korean cold noodle, namul, etc.
6) Singapore / Malaysian - curry chicken, chicken rice, laska
7) Indian - Tandoori chicken (or prawns), naah bread, samosa, lamb curry, alphonso mango kulfi

This is my preference, I've had food from friends/family from those places or from actual ethnic restaurants, except malaysian and indonsian cuisine.
japanese, chinese/singaporean (tie), indian, thai/vietnamese (tie), mongolian, korean.

Good question and that makes me think... here's my favorites (sort of in order)
Korean (bulgolgi is wonderful!)
Japanese (sushi or any tempura)
Chinese (cashew shrimp or honey chicken)
Indian (tandoori chicken)
Thai (wild mushroom curry, according to a friend)
I'd love to try most of the other ones and just haven't got around to it yet. Hard to find good authentic ethnic food in parts of Midwest.
