Vegetarians and espically vegans, besides fruits and vegetables, what do you feed your young children (3-10) to make sure they are getting all the nutrients they need?

Hmm..lets see. My kids eat the same things I do..we really do not do special meals since we are not a restaurant. We eat Tacos, sloppy Joe's, pasta dishes, rice dishes, homemade pizza, casseroles and alot more. We just replace meat (for recipes that are usually made with meat) with beans or soy products.

Rice and beans combined are a compete protein, they provide all essential amino acids. They do not have to be eaten in the same meal ( although its very good) but in the same day.
Other suggestions are peanut butter
eggs
grilled cheese
wheat pasta and tomato or alfredo sauce
yogurt
minetrone soup made with vegetable stock ( knorr makes vegetabl boullion cubes)
There is a book by Dr. Dean Ornish, although it is mainly for cardiac problems, the diet is a very strick vegetarian diet, you may get a lot of great ideas. I would get it from the library and check it out.

Very important:
Fortified Soya Milk (Containing Vitamin D, B12, Calcium).
Ground Linseed/Flaxseed for Omega 3. The Linseed/Flaxseed is good to mix in with smoothies, cookies, bread dough etc.

In my opinion, I think the children can be fed "Beancurd" there is much calcium for growing up. To make "Beancurd" into different delicious dishes. By the other hand, you can chop the "Beancurd" as different kind of shapes such as the cartoon actors or what.

Meat you numb nuts!

Vegans always talk about nature.......well nature intended for you to eat meat. It is not wise to try and fool the laws of nature

Lots of good options. My 12 year old has been a veggie for years. You can feed them quinoa pilaf, mac and cheese, curried cous cous, spanish rice, rice pilaf, stir fry, grilled veggie kababs, bean and cheese tacos, pupusas, arapas, mochi with homemade pimento cheese, deep fried okra, corn nuggets, mushrooms and hushpuppies, fondue with spagetti or fettucinni sause, with steamed potato, garlic bread, mozzerella cheese, brocolli and tater tots to dunk in the sauce, salads, rice salad, veggie nuggets, soups, stews, etc. I could go on for days. I fix all three meals a day for my daughter, including a hot thermos lunch. Even her non veg friends love the meals I fix, and they eat at my house often. There are SO many options. Just try foods that you may not have tried before for variety, such as oven baked rutabega or turnip fries, fruit kababs with yogurt dipping sauce, raw veggies with hummus, mashed potato and bean patties, portabello mushroom burgers, etc. Congrats on going veggie with your kids. I have always given my veggie grrls flax seed oil.. Just add it into their drinks..
