My husband wants a Fruit and Nut Easter Egg. Every recipe I've found, uses 2 boxes of powdered sugar Is there is any sugar free subsitute, for powdered sugar? I know Splenda can be used in place of regular sugar, but what can you replace powdered sugar with? I can't even find a sugar free Fruit and Nut Egg to buy, just fudge, peanut butter, coconut. and vanilla. Can anyone help me?

How about stevia extract? You would not use a direct 1:1 ratio substitution, but it is the same consistency, very sweet (sweeter than sugar), and all natural.

If it's a wet mix, you could try using one of the liquid artificial sweeteners. Personally, if I really wanted to hand make it, I would do a little experiment- have you considered melting down sugar-free chocolate, adding your things to it, and then setting it into a mould?

Just because it's sugar free, doesn't mean it will be carbo free.Carb counting is what it is all about.
I would just let him enjoy a regular candy egg and know the carbos and adjust meds, exercise to included this treat.
