French, Indian, Mexican, Spanish, Italian and Chinese. And I think that the only way to know is to try it in the country of origin. I have never seen a real Mexican restaurant in the US. Just ask if they serve gusanos de maguey, sopa de tortilla, the real thing, with epazote, panela cheese, heavy cream, chicharrón, avocado and pasilla chiles. Or, chiles en nogada, romeritos, omelette de huauzontles, crema de huitlacoche, natilla de cajeta, helado de guanabana, café de olla, horchata, agua de tamarindo, limonada with mineral water and fresh lime juice....you can get that in Mexico at any cheap cafeteria, like Sanborn´s.

Perhaps the most developped cuisine is that of France. This includes the Haute Cuisine of the Paris restaurants and also the regional cuisine of the normal domestic cook. Some diagree. Napoleon said "How can I govern a country that has 231 different types of cheese?". The French do have a genuine love of food, and their fresh produce from street markets is incredibly good. (No, I'm not French - I'm English). The French do say that no Englishman can be a chef, but they have'nt tasted my grub yet.
Italy, particularly Tuscany, has a marvellous cuisine - again, they use fresh produce and Italian olive oils and tomatoes are beyond compare. Del 'Ugo must be the best olive oil in the world.
For me, however, the greatest cuisine is that of the Indian sub-continent. There are an immense amounts of different regional styles, millions of masalas (sauces) and their vegetarian cuisine is amazing.

I have trouble choosing too. A choice between China, Japan, Korea, India, Thailand, France, Italy, Turkey and Russia's traditional cuisine. The only countries I know anything about with really disgusting traditional dishes are Iceland, Finland and Mongolia. Most traditional dishes are the result of centuries of trial and error producing the most economical, balanced and tasty meals possible with what's available locally. Usually traditional dishes which are cheap working-class fare in the country of origin are regarded as expensive gourmet cuisine elsewhere.

No one country has THE BEST cuisine, each country has something different to offer, you just got to get out there try as much as you can and decide what YOU like.
Personally I love most things from most countries that I have so far tried

I pick Italy, Mexico, Spain, Philippines, Greece, China, Japan to name a few, but the reality is that it's very difficult to go by countries. I think it's simpler to go by region or continent since there are some similarities found in each region or continent. But the truth is that every country/culture has their own incredible foods and dishes that anyone would love, and that is what makes food really good!

Most cuisines have great dishes but most people dont get to taste the authntic versions they are so waterd down over time or translations but after travelling through 54 countries i will list my top 5
1.Thai---i love the contrast in flavours hot sweet sour tart
2.moorccan---the grains fruits and nuts
3.Japanese---can live without raw fish
4.Italian--- steak pizziola canneloni and cannoli
5.British--- being a ex-pat i love coming home and having the fish/chips curries fry ups english breakfasts scotch pies

Hungarian. My family is from hungary and my grandma always cooks these decilious hungarian meals. I think i could eat hungarian food all day. Most of the dishes are goulash type soups with lots of ingredients. My favourtie one is this bean soup which has heaps of different beans and potato and carrot and hungarian sausage. It's the best thing in the whole wide world...although not very good for you...but that's beside the point.
