At this point, I'm considering anything. The only think I am for sure having is a big jar of margaritas. What else???

Set up a mini taco bar so your guests can serve themselves in between drinks! Have all the fixings ready such as ground beef, grilled chicken, rice, refried and/or black beans, soft & hard taco shells, lettuce, tomato, onion, sour cream, guacamole, black olives & salsa. You could also fix "Rotel from Hell" dip ( 1 block Velveeta mexican cheese, 1 can of rotel chili's & tomatos & 1 jar of your favorite salsa - oops, I used the word) Put all into a crockpot & heat on low til melted. Serve with your favorite chips. Don't forget a few tequila shots to go as "sidecars" for the margaritas!!

Regular nachos using chips, beans, cut up fajitas or taco meat and cheese.
Flour tortillas cut in wedges and brushed with a little melted butter and sprinkled with cinnamon sugar. Bake in oven until crispy.
Bowl of fruit salad or fruit on skewers.
Depending on how much food you want, you could do a taco bar.
Chips with guacamole, pica de gallo, salsa and yes, queso!
You could buy tamales and slice into bite size pieces if you are just doing appetizers.

think super bowl party
serve great mexican dips, 3 or 4 different salsas, fresh fruits and chips
keep the margaritas flowing
and also serve some cold mexican beers

Guacomole - mix mashed hass avocados with pinch of oregano, grated onion, salt, and lemon juice. Voila!
Refried pinto beans - Soak, boil beans, with slice of onion. Fry a few slices of onion in a few T oil till brown, add a few cups beans with their water. Mash some of beans in pan w utensil, boil till thickened, add some grated cheese!
Also, enchiladas but they are a pain to make. Ceviche is good, mix raw fish and shrimp, calamari with diced vegetabnles and salt, chile, and a ton of lemon juice.

quesidillas...you can make them with just cheese or toss in some chicken...serve with guac, sour cream, and salsa...great appetizer...good luck!
