add more beans or water to dilute the over all saltiness

You could indeed add potato but since the beans are already cooked, cooking the potato further may cause the beans to get too mushy. So maybe you could cook an additional portion of beans (just a small portion will do) WITHOUT salt and add it in to the salty beans.. That way the saltiness should be balanced out.. (I don't know about tomatoes, 'cus although they do work, it really depends on the type of bean dish you are making.)

Remember, too little salt is ok, cus you can add more if you want to, but put in too much and the food goes to waste. :-)

The potato trick should work. Something else you could do is add a can of diced tomatoes. It would help cut the salty taste without watering the taste down like water might.

Too fix a food that is too salty, add a spoonful of sugar. If you have that problem with a soup, add a cut up potato to absorb the extra salt.
