Oh, and I should specify not to use the wikipedia entries - I wrote them. I'm trying to decide if I should combine the two pages. :-)

This is a good question:

I am an Indian, they are the exact same. It is essentially an Indian wok. It's more of a language issue: North Indian languages (like Hindi, Punjabi, Sindhi....) refer to this cooking vessel as a "KARAHI". Some have handles, some do not.

Other languages (such Marathi, Gujarati, Konkani....) refer to the exact same vessel as "KADAI".

A wok-like Indian utensil called the Kadhai (or Karahi) is perfect for stir-frying, sautéing and deep frying. A Kadhai is not too deep, has a wide top, rounded bottom and distributes the heat allowing for faster, more even browning and cooking. In India, Kadhais are made of iron, aluminum, copper, brass or stainless steel with a thicker bottom. If you can't get your hands on a traditional Indian Kadhai a good quality wok will do an equally good job.

We have alot of languages in India and even more dialects and thousands of variations!

A Karahi is a type of heavy sided cooking pot (similar shape to a Wok) used in Pakistani and Indian cooking. The word Karahi may also refer to curry dishes cooked in this way, as in Karahi Ghoust. Kadai (or Kadhai) is a cooking utensil used mainly in Indian cooking. It is a thick, circular, and deep frying pan that is meant primarily for shallow or deep frying of meat, potatoes, sweets and snacks like Samosa and fish, among other dishes. It is similar to a stir fry dish used in Chinese cooking. It is traditionally made out of iron, although teflon coated non-stick varieties do exist.

Some dishes in India are often presented kadai fresh, like Kadai Chicken, Kadai Paneer, wherein the dish is served with a miniature kadai and hot coals underneath it to give the impression of being hot from the stove

KARAHI and KAKAI
are two different things,

KARAHI
Karahi is cooking pot used in pakistani and indian couisine, very similar to chineese wok,

as other friends have already give enough information about that but i would like to add one more thing in it. Karahi is actually made of clay but now we find it made of iron, stainless steel, coper etc etc......

when we use word Karahi in any recipe of indian couisine that basically means it is cooked in that type of pot, then it depends what actually it is, for example chicken karahi, muton karahi, chicken paneer(cheese) karahi, mughlai(mughal couisine) karahi, etc etc...

and now something about

KADAI

Kadai is typically pakistani recipie, there are two types of KADAI

(1) --- it is made of LASSI (yoghurt drink, not sweet though but a little bit salty). you cook it on low heat adding some gram flour in it. some people add pakoras (you may know it as onion bhaaji, but this one is without onions) in it as well, but its not compulsory.
you get it as thick sauce when it is ready,

well recipie is available if required just mail me at namughalz@yahoo.com

(2)------ second one is made with aniseeds, adding some herbs and very few spices, it is very thin, very similar to chicken stock.
some people add small amout of rice in it as well.

people enjoy this especially in winter, and it is known very useful in flue and sore throat conditions,

well recipie is available again

i am hospitality professional and have pakistani family background. i am working as food and beverage manager in 4**** hotel in cyprus. and have enough knowledge in food and drinks.

help is always available if required at namughalz@yahoo.com

take care of yourself and keep on smiling
