can someone reccomend a simple yet tasty vegetarian meal i can cook or prepare? Thanks a bunch

Try a simple spaghetti supper. Get a jar of meat and dairy free pasta sauce, and cook up some pasta. You can saute some onions, zuccini, garlic, etc to throw into the sauce, too. Get a loaf of french bread, and warm it up in the oven, then make a spread out of margarine and honey (if she eats honey). You can make a salad for a side dish, or even saute up some green beans (canned is fine) in olive oil, garlic and almond slices. I think she would be really pleased with it. :) Good luck!

Simplest vegetarian meal- Spaghetti.

1. Spaghetti

2. Sauce. Just get a couple cans of prego without meat. There's lots of kinds that don't have meat, There's mushroom, peppers and garlic, etc.

3. Optional meatballs for the carnivores at the dinner. If you want, you can make meatballs ON THE SIDE, in their own sauce, for those who eat meat. Just make sure the meat is separate from the sauce that the vegetarian will eat.

4. Salad without cheese (in case she's vegan)

5. Salad dressing without dairy (italian, Vinagarette)

6. Vegetables such as green beans, peas, etc

It's a full meal that pretty much anyone likes.
That is my recommendation if you aren't used to cooking vegetarian. And it's compatible with meat eaters diets, too.

Since you're not very experienced at vegetarian stuff yet, I say "go simple"... Rice, steamed summer squash with strips of peppers and onion, and soy beans (edamame)... Or do yourself an even bigger favor and buy some veggie burgers, have a nice garden salad, and some corn chips. Also, may I recommend a nice blush chablis or crisp white wine? I think you'll do fine if you go simple, instead of trying something harder. I have found that vegetarian dishes can be very yummy, but if not done just perfectly, can be awful. Vegetable dishes are usually less forgiving. What I mean is, with steak, if it's a bit overcooked, it's still a steak... add some A-1 and it's yummy. Vegetables that are a little overdone are mush... You could turn them into soup or mulch for the garden, but they just aren't acceptable, even with A-1. lol.... So go simple with things that aren't easily destroyed. Good luck.

Something simple to make and delicious, hmm? Stir Fry!
It's one of the easiest things to make, buy all your favorite veggies, (Brocolli, Snap Peas, Zucchini, Peppers, anything that can be heated) Saute all your onions and garlic in Butter or if they're Vegan use oil. Then add your veggies, add some spices, maybe some sauce (sweet and sour, or peanut sauce) throw on top of some rice and wah-lah you're done. If you wanted to try tofu, I would recommend marinating it you have time, then frying it, in smallish chunks, about 1/2 inch maybe. 
If you're able to find Tempeh, you could fry that as well, cut into thin sticks, and maybe add some coconut milk. There's no recipe really, just wing it but taste as you go along.
You could also throw some caraway seeds in the rice. But only do what you're comfortable with and it will turn out great. Cooking vegetarian is really easy, just think out of the box!

How about a veggie Spaghetti Bolognese?
This has got to be the easiest thing in the world to make - it's the first main meal I ever cooked. All you really need is some tomatoes (if you use fresh - impress your date by peeling them. To do this boil a pan of water, dunk the tomatoe in for 13 seconds and then remove with spoon), mushrooms and peppers.
Other things I like to add include courgette (zucchini), roughly cut spinach and lots of fresh garlic and basil.
If your date is a veggie for health reasons, she might like it if you serve wholemeal pasta.
And if you have any garlic left, you could make some garlic bread (but check that she's not vegan otherwise you will need vegan butter).

I'm a vegetarian. Not everything that we eat has to be "vegetarian", as in meeting all the nutritional needs of a vegetarian. It just means, don't give us any meat, fish or poultry products when you give us a meal. We understand and don't want to be a problem to our hosts.

Pasta is always a good bet. You can search for great vegetarian recipes. Or search for pasta recipes and make sure the ingredients are okay. And serve it with salad or vegetables just like regular people have.

Okay... im vegetarian. Here are a few of my favorite meals.

1. A large salad with snap peas. Snap peas are great if you can find them at your local store. Just heat and shock (throw into boiling water for about 1 1/2 minutes, then throw in bowl of icy water)

2. Veggie burgers. Find them in the freezer section at your local grocer.

3. Veggie kabobs.

4. Eggplant parm. Ummmm. I'd go with that.

You could make a casserole, there are plenty of vegetarian casseroles. For a side dish, salad is always a good bet. Also, I'm a vegetarian and I LOVE curry dishes! So many curry dishes are vegetarian and nutritional, but taste really, really good.
And pasta is usually a safe bet, although I myself don't like any pasta other than ramen. You could make a vegetable lasagna.
A veggie pizza would be a good thing to make. You could have tacos with beans instead of meat, and soy cheese if she is vegan. But if she is vegan, remember, no cheese, milk, honey, etc.

A pasta dish with a chunky sauce or a
Veggie stir fry over rice

Both take no time at all and are easy and healthy.

I would serve some crusty bread and a side salad with the pasta.
