I eat whatever you eat minus the meat or with a meat replacement. As a matter of fact, this morning I had waffles and now I'm snacking on a vegetable roll. Both happen to be vegan.
The past few weeks I had pasta, sloppy Joe's made with soy crumbles, Asian stir fry, grilled cheese with tomato (cheese made with microbial enzymes), corn chowder, chili, broccoli pot pie, home made pizza, tacos, veggie burger, cheese enchiladas, grilled veggie kababs and more.

PLEASE pay no attention to the 2 posts above mine. These people are not vegetarians. vegetarians do not eat fish..ever.
A devout vegan that ate salmon??? Now I've heard it all.

Tofu is great for vegetarians, as well as vegi-burgers and various vegetables and fruits. I know that Linda McCartney made a cookbook for vegans before she died and I think her line of food has not been discontinued. She has some great recipes.

Depends on your taste:
Plenty of fresh fruits and fresh veggie salads
Good vegetarian entrees such as lasagnas, veggie pizza, oat burgers, enchiladas, stuffed shells, barbecued tofu, nut loafs. etc...
A good appetite and health is your requirement for enjoying good foods.

Lots of nutrition. They health food stores and if you are vegetarian, you need a source of protein. So try a protein chew or protein pill! =)

here are a few ideas: curried cous cous, mac and cheese, twice baked potato, pasta with brocolli and alfredo sauce, grilled portabella mushrooms, green peppers stuffed with cous cous or rice, zuchini stuffed with quinoa, rice salad, stir fried rice, pasta, grilled veggie kababs, mochi, arapas, pupusas (with beans and cheese) patties made from mashed potato and beans, roasted veggies, cauliflower with cheese, I could go on all day. Open your mind to new things

Nuts, greens, cheese, yoghurt, fruits, paneer, cereals.....so many choices.

When I used to be a "Devout Vegan" I would buy all of the squashes, and carrots, and mixed salad's, and fresh garlic, and onions, and EVOO, (Extra Virgin Olive Oil), and I did eat Salmon, (because it is sooo healthy for you, and rich in Omega 3!!!) Very healthy for us, to eat fish, maily fish with scales & fins, both!! Not one or the other, both fins and scales, no crustations, as much as we all love them, they are their to clean the ocean floor, only!! I'd spend about a good hour in the kitchen cutting and gutting my squashes, and zucccini, and carrots, and steam them, first you put it on boil, until your water is boiling hot, then if you have like one of those screen types of medal to place the vegeez on in the pan, lower your heat, and with a lid on top steam away until fork tender! Have a baked potatoe with the vegeez, and (no butter, at all for any of these foods!!) and put salsa on your potatoe, instead of butter, (your body will need a certain amount of salt, in which the salsa and fish can provide for you). And get you some mini red deliscious apples, and banana's, and some honey, (the darker, the better for you) and chicken, skinless and boneless....... and some honey bran muffin's..... In the am's, before your coffee or tea or anything have a banana, and wait about a 1/2 hour, then with your coffee, have your honey bran muffin, but only until your burping banana, because that banana will have you wanting to do laps, it will give you so much energy on a empty stomache!! I promise you this!! So, its important to wait for it to digest before you eat or drink anything else!! Then you can eat chicken, but boil it first, and then place it, in a baking pan and put fresh garlic and honey all over it on both sides, and a tad of water in the pan....for moister, and bake for about 45 minutes to an hour at 350......along with your baked potatoe, and 1/2 slice of whole wheat bread, and your vegeez, and or salmon (in place of your chicken) and you can eat as much vegeez as you like, too!! And no butter on the wheat bread.. I went from a size 9 in pants to a size 5 in pants on this "Very healthy diet!!!" To the point to where my family was getting concerned that I was anorexic again, (because I was once in my early 20s) but when I told them about all of the good "Wonderful Foods" I was partaking in, they wanted to try it too!! Oh, and eat mini red deliscious apples, for those times when your hungry, but dont want to blow it, I used to stick a couple in my purse, or on my car seat, for those moment's when I'd see my friends eating "Junk-Foods" you know.. And they also will give you energy, and clean your teeth at the same time!! So, there you have it, hun!!! Happy Eating to You!!! Smile!!!
