What are some good options for a sushi novice to try? I know I already like the California rolls (hold the caviar please), and I'm okay with the eel. But I think I'd like to venture into the raw fish territory, but I'm a little scared. Anything else I should know about how to order? Are they offended if I ask for a roll without the caviar?

Tuna is a very mild taste -- it was the first fish sushi I tried after only eating veggie sushi for years, and I really like it. Shrimp tastes as you would expect shrimp to taste (I'm assuming you've eaten shrimp before), and salmon and scallops are also friendly introductions.

No one will be offended if you ask them to leave off the caviar.

You might want to explain your situation to the waitstaff -- they and the sushi chef(s) will very possibly have some knowledgeable suggestions for you. Remember that they don't want to freak you out -- they want you to be happy with your meal, so that you come back. They should take good care of you.

You might try some raw rolls, like a simple tuna roll or a spicy tuna roll. There are enough other things like rice etc in the way to help you with it. Also, many places offer smoked salmon, which is not too unusual but has the same texture as raw. That may be a good transition bite.

I think the best method is to go with a friend who is willing to share. That way, you can try a bite or two and not have to order the whole thing. Once you get past the *thought* of the fish being raw, it's quite easy.

I love sushi. It's my favorite. Try a crunchy roll - It's pretty much a tempura wrapped around a California roll. For raw fish territory, try a spicy tuna roll. If you prefer no rice, you could also try sashimi. Sashimi is pure fish only. It's like sushi without the rice. Don't be afraid to ask the sushi chef. If you are not comfortable on certain things to try, tell the sushi chef. They won't be offended by your request. Enjoy. You'll be an expert in no time ;)

You can ask for a roll without the masago(caviar) that shouldn't be a problem.
You might want to start with the yellow tail sushi. It hasn't got as fishy a flavor. you really can't go wrong with toro (fatty tuna)
or salmon. It really is about trial and error. Why don't you go with a friend who likes sushi, order a boat(usually it's an assortment of sushi) and try a little bit of everything?

okay. Tuna in good. Also a cooked roll that is absolutely awesome is the las vegas roll. I has cream cheese and salmon and some veggies and is fried. It is soooo good!! Also try tamago. It is a cooked sweet egg on top of rice which is also very very good. Just tell them that you do not like the fish eggs, they will not be offended, they may give you a hard time but not offended. The caviar is actually called roe when it comes to tuna. They won't get offended at all if you ask for what you want. The Japanese have a very cautious attitude when it comes to Westerners actually liking their food anyway. For raw fish I'd try ika (squid) nigiri or salmon or tuna. You'll be hooked! Pun intended. Ask the sushi chef for what's fresh, too. There are tons of great fish out there.

The Spicy Tuna roll,I freakin love any sushi though,can't stand Sashimi (raw fish)though!And no they won't be offended if you say no caviar although they will be offended if you say something bad about the food,they don't take that lightly and they will talk crap about you in Japanese too!

Try something like a shashimi spring roll. The type we make at the restaurant where I work are great; ahi tuna wrapped in a wanton wrapper and flash fried for 60 seconds. It cooks just the wanton wrapper and the outer edge of the fish very good with a soy-ginger sauce.

They shouldn't be offended for you asking to hold the caviar. If they want to still have business, then they should do what you want. But I cant think of any other sushi. California is my favorite. sorry :(

Try the rainbow rolls. Its got the rice like the California rolls do but they are wrapped in raw salmon and yellow fin tuna. Very yummy!
