Depends on where you are eating--- It is important to (very sweetly!) ask the waiter to please check with the chef that no animal broths have been added. I've been told something was vegetarian, but they did not consider chicken broth or fish in a Thai sauce to be meat-- So you must ask them to check--- and then tip a little extra for the extra service!
I am vegetarian for religious reasons, as well as all the rest of the good reasons to not eat animals. Sometimes people will suggest I "just eat around the meat" on a plate--- so I have to explain to them why I cannot do that. With Muslims and strict Jews having certain dietary restrictions also, people seem more co-operative when you tell them it is against your religion.
